Chicken curry with coconut milk Recipe
Ingredients
1 kg chicken
1 cup thick coconut milk
2 cups thin coconut milk
1 finely chopped onion
curry leaves
1 tbsp ghee
For grinding masala
1 tbsp ghee to roast spices
1 onion
5 flakes of garlic
15 dry red chilies
cinnamon stick,cloves-4
1/4 tbsp black pepper
3 tbsp coriander seeds
1 tbsp cumin seeds
1/4 tbsp methi seeds
1/4 tbsp fennel
1/2 cup grated coconut
1/2 tsp turmeric powder
small marble sized tamarind
heat a tbsp ghee and fry onion and garlic till light brown and set aside
same pan roast above mentioned spices,grated coconut,turmeric powder and add tamarind and grind fine paste by adding thin coconut milk
take 2 tbsp of masala paste and set aside to cook with chicken pieces
now add fried onion garlic and grind again fine paste
cooking chicken
heat 1 tbsp ghee add curry leaves and fry finely chopped onion till brown
add chicken pieces saute well cover and cook for two minutes in a low flame.
add salt and 2 tbsp masala paste,remaining thin coconut milk and cook chicken till soft and tender.
when chicken is cooked add ground masala paste. Adjust gravy consistency by adding masala water. Gravy consistency should be medium thick. allow the curry to boil.
Now you can adjust salt, keep low flame and add thick coconut milk and gently stir.
bring curry to a slight boil,add finely chopped coriander leaves stir well and switch off flame.
Chicken curry with coconut milk is ready to serve.
