Is it really that easy for a beginner cook to make something better than Stouffer's? With something as easy as fettuccine Alfredo, you bet it is!
Chicken Fettuccine Alfredo with Broccoli
Serves 3
Ingredients:
1 Chicken Breast
Chicken Seasoning*
Canola Spray
Fettuccine Pasta*
½ C Heavy Cream
½ Stick of butter
5 Cloves of garlic
1 ¼ C Finely grated parmesan cheese
Salt & Pepper to taste
1 Whole broccoli bunch
Instructions:
Chicken
Place chicken breast in an airtight bag. Pound out the breast, making it thinner.
Season the chicken with chicken seasoning. As much as it feels right to you.
Using either an outdoor grill, or a cast iron skillet, or a George Foreman grill, spray the cooking surface with canola spray, and grill both sides of the chicken until cooked through to 165 degrees internally.
Wait for the chicken to cool down before cutting it into smaller pieces.
Alfredo Sauce
In a skillet or shallow pot, melt butter and pour in the heavy cream. Whisk together. Let it thicken for a couple minutes, stirring occasionally.
Add parmesan cheese and stir in until evenly combined.
Add 5 cloves of minced garlic and stir it in.
Season to taste with pepper and 1-2 tsp of salt.
Prepare fettuccine pasta, and transfer into the alfredo sauce. Add some pasta water into the sauce to loosen. Evenly coat all of the pasta in the alfredo sauce.
Cut broccoli into bite-sized pieces. Sauté broccoli in butter until lightly browned.
Add chicken and broccoli to the pasta. Garnish with Parsley.
