*Instructions:*
1. **Sauté Onions**: Heat oil in a karahi (wok) or deep pan. Add cumin seeds and let them splutter, then add sliced onions and sauté until golden brown.
2. **Cook Chicken**: Add the chicken pieces and cook until they start to brown. Add ginger-garlic paste and sauté for another 2 minutes.
3. **Add Tomatoes and Spices**: Add chopped tomatoes, red chilli powder, turmeric, and salt. Cook until the tomatoes are soft and the oil starts to separate from the masala.
4. **Simmer**: Add green chillies and a little water if needed. Cover and cook on low heat for about 20 minutes, until the chicken is tender and cooked through.
5. **Finish**: Sprinkle garam masala and stir. Garnish with fresh coriander leaves and julienned ginger.
6. **Serve**: Serve hot with naan, roti, or rice.
