Ingredients:
2 medium-large chicken breast cut horizontally ( 4 Halves)
1 1/2 cups panko breadcrumbs
1/2 cup parmesan cheese
4 eggs beaten
1/2 cup flour
Salt
Pepper
Pasta sauce
Spaghetti
Olive oil for frying (1/2 cup)
Directions:
Preheat Oven 450
Cook 15 minutes Cut chicken breast in half
Flatten chicken breast half with meat tenderizer
Beat 2 room temperature eggs in a container
Put 1 cup panko bread crumbs in container
Mix 1/2 cup grated parmesan cheese into bread crumbs
Put a pinch of Salt and Pepper on each side of chicken breast
Use a sifter and sift flour onto both sides of chicken breast
Dip chicken breast into egg coating both sides
Dip into bread cumb mixture
Dip back into egg mixture
Dip again into bread crumb mixture for double coating
Set aside
Put 1/2 cup to 1 cup olive oil into pan for frying
Heat olive oil
Cook chicken breast 2 minutes per side on medium heat
Place chicken breast onto pan
Top with 2 tablespoons of pasta sauce each
Top with 2-3 slices of Fresh Mozzerella cheese
Place into oven for 15min
While chicken cooks
Place Spaghetti into boiling water
Cook until al dente
Strain pasta
Stir in past sauce
Once chicken is done done ( Temperature 165)
Put Spaghetti on plate
Put chicken on top
