My first time trying this--big hit with the RMR. It's an easy recipe tailor-made for those only cooking for 2. You can put the prepared ingredients away and make up a quick quesadilla for lunch the next day.
Ingredients:
2 large chicken breasts
2 tablespoons of taco seasoning (I made my own or use store bought--
see my homemade taco seasoning recipe below)
1 large onion, halved and sliced
1 red pepper sliced
flour tortillas
2 1/2 cups grated Colby Jack cheese
Optional: Add your favorite hot sauce. Mine was spicy enough without it!
Directions:
1. Heat oil over medium high heat. Sprinkle taco seasoning over both sides of chicken breasts. Sautee chicken until done (approximately 4 minutes per side). Let cool, then cut up into bite-sized pieces. Set aside for later.
2. Sautee onions and pepper over medium heat in oil until desired level of doneness. Set aside for later.
3. In a separate skillet, melt butter over medium heat. Add 1 tortilla. Layer with cheese, then add onions/peppers and chicken. Top with more cheese and then add the other tortilla and press down slightly.
4. Heat until tortilla turns a golden brown (about 2-3 minutes). Carefully flip over the tortilla, adding a bit more butter if required. Cook until that side is golden brown.
5. Cut into quarters and serve with guacamole, sour cream, and salsa.
Taco Seasoning:
2 teaspoons chili powder
2 teaspoons ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon each of salt and pepper
