Chicken Scallopini
2-3 boneless chicken breasts
salt
black pepper
1/3 cup all purpose flour
2 Tblsp. olive oil
6 Tblsp. butter
8-10 oz. baby bella mushrooms, sliced
1/2 onion, finely chopped (or shallots)
4 cloves garlic, minced
1/2 cup white wine
1/2 cup chicken broth or stock
Juice of 1 lemon
1/2 cup heavy cream
freshly chopped parsley for garnish
Place flour in a shallow bowl. Make sure chicken is dry. Dredge chicken in flour and salt and pepper each piece.
In a large skillet over medium-high heat, heat oil. Add chicken and cook until golden, 3-4 minutes per side depending on thickness. Remove and set aside.
Reduce heat to medium. Add butter, onion, and mushroom to skillet and sauté for about 8 minutes. Stir occasionally. Add garlic, and cook an minute or two more.
Stir in wine, broth, and lemon juice. Salt and pepper if you wish. Let simmer until slightly reduces and thickened. Stir in cream.
Return chicken to skillet and spoon sauce over to coat. Garnish with parsley just before serving.
Serve with pasta, potatoes, anything you like that will sop up that lovely sauce! Enjoy!
