1 cup vegetable oil
1 cup flour
1 large onion, chopped
1 large bell pepper, chopped
2 stalks celery, chopped
6 cups chicken stock
Water as needed
Season to taste! I use salt, pepper, Tony Chacharee's, garlic powder, onion powder, and Italian seasoning
1 can diced tomatoes
4 cups sliced okra
2 large boneless skinless chicken breasts, browned
1 pound Andouille sausage, sliced
1 pound peeled and deveined shrimp
In a large pot, heat the oil. Add the flour, stirring constantly, cook on medium heat until you get a dark brown roux. Add the trinity and cook about 5 minutes. Stir in the stock and stir until smooth. If the roux gets too thick, add water as needed, just be sure to check your seasonings! Season to taste. Add the tomatoes and okra. Cook for about 15 minutes. Add the chicken and sausage. Cook for another 15 minutes. Add in the shrimp and cook until they are just done. Serve over rice!
