• 1.5 lbs boneless, skinless chicken breasts
• Metal skewers
• For the Marinade: 1/4 cup soy sauce, 2 tablespoons honey, 2 tablespoons lime juice, 2 cloves garlic (minced), 1 tablespoon grated ginger, 1 tablespoon ground coriander, 1 teaspoon ground cumin, 1/2 teaspoon turmeric, 1/2 teaspoon cayenne pepper (optional), 2 tablespoons vegetable oil
• For the Peanut Sauce: 1/2 cup creamy peanut butter, 1/4 cup coconut milk, 2 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon lime juice, 1 teaspoon grated ginger, 1 clove garlic (minced), Water (to thin, if necessary)
• Lime wedges and chopped cilantro for garnish
Instructions:
1. Start by threading the chicken breasts onto metal skewers.
2. In a bowl, mix together all the marinade ingredients until well combined. Pour the marinade over the chicken skewers, ensuring they are evenly coated. Let them marinate for at least 2 hours in the refrigerator.
3. Preheat your grill to medium-high heat (around 375-400°F / 190-200°C).
4. Place the marinated chicken skewers directly onto the preheated grill grates. Grill for about 5-6 minutes on each side, or until the chicken is cooked through and has nice grill marks.
5. While the chicken is grilling, prepare the peanut sauce by combining all the sauce ingredients in a saucepan over low heat. Stir until smooth and heated through. If the sauce is too thick, add water gradually until you reach your desired consistency. Keep warm until ready to serve.
6. Once the chicken skewers are done grilling, transfer them to a serving platter and garnish with lime wedges and chopped cilantro.
7. Serve the Grilled Chicken Satay hot off the grill with the warm peanut sauce on the side for dipping.
