CHICKEN WITH SAFFRON SAUCE RECIPE INGREDIENTS :
Boneless chicken cubes 1.2 kg
Onion chopped 2 tbsp
Tomatoes chopperised 2
Crushed garlic 1 tbsp
Parsley 1 tbsp
Mushrooms sliced ¼ cup
Stock 1 cup
Salt ¾ tsp
Black pepper crushed ¾ tsp
Worcester sauce 1 tsp
Soy sauce 1 tbsp
Oyster sauce 1 tsp
Chili sauce 1 tsp
Flour 1 tbsp
Cream ½ cup
Saffron ¼ tsp
Butter 2 ounce
Crushed red pepper 1 tsp
METHOD :
Melt butter, fry onions and garlic, add chicken cubes with salt, cook for 5 mins, add tomatoes with all the sauces, cook till dry, add mushrooms, flour, fry a little, add stock, cook for few mins, add cream, parsley and saffron. In a dish, put the chicken mixture, and serve with rice and fries.
DESI-STYLE PASTA RECIPE INGREDIENTS :
Mince 250 gm
Fettuccini pasta as required
Oil ¼ cup
Onion 1 sliced
Cumin seeds 1 tsp
Coriander crushed 1 tsp
Mustard seeds ½ tsp
Ginger garlic paste 1 tbsp
Curry leaves 8-10
Salt 1 tsp
Cumin roasted & crushed 1 tsp
Allspice ½ tsp
Karahi masala 2 tbsp
Crushed red pepper 1 tsp
Tomato puree ½ cup
Ketchup ¼ cup
Grated cheddar cheese ½ cup
Capsicum chopped 1
Milk ¼ cup
Cream ½ cup
METHOD :
Heat oil, add onions and mince all the seasonings with curry leaves, fry for 1 minute, add mince, and fry for 10 mins till done, add tomato puree, ketchup, salt, milk, cream, and all the rest, mix well, lastly add in capsicum, cheese and fold in fettuccini pasta.
