Use an air fryer 400 degrees 15 minutes to roast. Such a game changer for roasting and peeling your chili’s. The peels slip off so easily. I did 10 pounds of hatch chili’s, peeled and ready to go in 10 minutes.

I so completely agree with you on this! I have fought against using an air fryer (I'm a tad old-fashioned) for what seems a long time...as you said. Game changer. I own a rather expensive convection style oven but the simple counter top air fryer wins every time!

@@shawnp6653 No, it’s not necessary. The skins are fairly dry when finished and peel right off, sometimes in one great peel. Game changer!

Chile Rellenos is one of my favorites. Everywhere I go I try them at the various Mexican restaurants. I rarely find one as good as one restaurant I went to years ago. So... of course I had to make them home made. Nothing like it in the world and I love stuffing them with ground meat. I have made them the traditional way and casserole as well, but this recipe looks amazing, and I can't wait to try. My ex was of Mexican heritage, and he made the most amazing homemade sauces. He is the one who taught me to make my own taco seasoning homemade, so now I have jars of mixed seasonings for dishes from around the world!

In my youth, and throughout most of my early years I did the same thing, trying out different Mexican restaurants both here in the U.S., and all the way down the Mexican western coastline (not the Baja) all the way through down to Chapala, Jalisco riding down on either Rt. 15 or 150 on our bikes (Harley's) back in the late 70's. It was GREAT!! Good memories had there indeed. It's amazing the difference in cuisine once you leave the comfort of the border. Anyways, try mixing 60% 70/30 beef (a little more fat is good), with 20% ground pork and 20% good quality chorizo as your stuffing. Mix up some sauteed and chopped Anaheim's into the meat mixture instead of only "ground meat". Try it, you'll thank me. ; - )

I cook a lot when I visit my daughter and her family, my grand kids love it when I bake Banana Nut Load.... & so does my son-in-law 😁 I've shared some of your videos with my daughter, she is a very good cook, she makes a very tasty Green Chile Chicken/Port Posole, its a lot of fun when we cook together and enjoy our time together. They are Anaheim unless grown in the Hatch valley. Maybe that is where you live.

@@campfarwest2288 No, I don't live in Hatch, although I used to live in Cruces. I did however, buy a pack of seeds that say they are Hatch Chile Pepper seeds. Pretty sure that makes them Hatch peppers, otherwise the company could be accused of false advertising.

Been searching since the mid 80's for something close to my former girlfriend's, abulela's, recipe. I think it was made with the hatch chilies and of course the chorizo that made a huge difference. No restaurant can come closes.

I can't wait to try this recipe!! I love chile rellenos done the classic way, but I just never can seem to wind up with stuffable roasted poblano chiles. This will solve that problem so well! The one change I might make is to add finely diced serrano chiles and top the whole thing off with some really good Crema. Thanks for sharing!! Your videos are absolutely excellent!!

Thank you!! I’ve just now decided to try making relleños and this is so much easier. I just wish I could print the recipe to have on hand while cooking. I have MS and vertigo and have started having more difficult concentrating so I really have to study recipes so I don’t mess them up. I think I’ll add some shredded chicken because my husband prefers chicken and I have some leftover from making taquitos. I can’t wait to try them! 3:26 - "Hatch" brand whole green chiles come in those same large cans at Central Market and some HEB stores in Texas. They would probably work well in this recipe.

I don't remember the brand been awhile but the chiles tasted like tin or briny. I believe 505 and another brand sell frozen ones at grocery stores here in Surprise.@@marcyinspired1442

This looks fantastic! I rarely make chili rellenos, but when I do, I add jalapeños or habeneros because i like the heat. A Mexican friend's grsndmother wants me to get a DNA test because she thinks that I am psrt Mexican and just don't know it. Another excellent recipe! Thank you!

I would make a tiny suggestion. Stuff the peppers and have them ready to go in the casserole as soon ad the batter is done. This will prevent the separation of the batter we saw here.

@marcy inspired I live in a small town with one grocery store and I'm fortunate that they at least have these Ortega chilis. Whole is the way to go, something about the diced ones that I don't like, kinda like cheese that's pre shredded haha. The only origin I can find for Ortega chilis is that they've been around since the 1800's and they're chili seeds originally came from New Mexico. Hatch is always best but hard for me to find, might start using home roasted poblanos, they look pretty good.

What a great idea to place them in the oven! In the past, I have fried them in a skillet and it’s just so messy. Going to try your method. Also, I have only filled them with picadillo but like the suggestion another viewer made and that’s to fill with potatoes and chorizo.

The hardest part is just roasting and peeling those chiles. Next time, I'll have to buy those whole canned chiles for an even easier alternative. It's always good to have something you can whip up quickly when you're pressed for time.

My daughter lives in west Texas and every once in a while the grocery store will have a pit set up outside where they roast the peppers for you. She buys 5 pounds of them & shares them with her sister, my wife and I. They roast them & put them in a plastic bag. Up to the buyer to peel & de-seed them.

This looks amazing. I've made them before, but this casserole version is stellar because the pan frying step, each one individually fried in a pan full of grease makes the dish too heavy. I'm a big proponent of healthy fats like Lard and Tallow, but the additional chorizo and less grease make me 🎉 very excited to try this one at home. I'm 6 mo into ketogenic eating and this recipe is totally acceptable. 🎉 YAY! **So arevyou saying you prefer Anaheim peppers (?) Or, you prefer Hatch chilis(??)

Love it. I usually end up making a casserole because I almost always have a hard time stuffing them. Watching you do it I think I discovered what I was doing wrong (I would try to clean & cut them open in my hand leaving the stem and doing the "T" cut thing). As such they'd often rip open. Hence the casserole 9 out of 10 times in our house. Also, something occurred to me after you pulled it out. Would a light spray of oil on top just before being done (maybe 5 to 10 minutes prior) create sort of a fried crust to the batter? Maybe even broiling for a minute or two? In any case, as always another outstanding video! In answer to your question about what to put in diced par-boiled shrimp, or other seafood, or diced par-boiled potatoes and/or hard boiled diced egg whites perhaps (be good with the chorizo).

Poblanos are one of the most mild chilis you can find, which is why I added chorizo to this dish to give it a little more kick. I don't like things overly hot, but I do want to know it's there. The thing is, your heat tolerance will grow, the more chili you eat. As a rule of thumb, the wider and rounder the chili, the more mild it is. The thinner and pointier, the hotter it is. The greatest source of heat is found in the seeds and veins, so you should definitely remove any trace of them, if you want it more mild. I cook with a lot of Hatch green chile which, by the way, is always spelled with an "e" in New Mexico. It comes in varying levels of heat, and is always labeled as such. (mild, medium, hot, XHot, etc.) If you're cooking any of my recipes with green chile, you can usually add sour cream to the sauce, and that helps bring down the heat. If you're cooking any of my red chile recipes, you can add tomato sauce to it, and that will accomplish the same thing. Hope this helps. Thanks so much for watching!

Use a 20 oz soft drink bottle squeeze it slightly stick it against the yolk and let go and it will suck the yolk up into the bottle

That looks beautiful! I think for ease of assembly, I would lay the peppers flat and top them with a layer of chorizo, a layer of cheese, and another layer of peppers, then cover with the rest of the batter and cheese. I think I'd add a layer of thinly sliced potato in the middle, too!
