I always bought my chile from Lujan farm when I lived in Las Cruces! When my kids were younger, we picked it ourselves because I wanted them to experience that. Later I bought the already picked. I remember the anticipation while they roasted it for me , that smell was heaven!!

I had a soup similar to this in Silver City New Mexico. Got to talking to the owner and took some time to go over the ingredients. The 2 differences is that he adds Jack cheese with the cheddar plus heavy cream. It was so creamy and delicious 😋

What a nice, professionally produced video. I'd like to point out that this recipe is completely Keto-friendly and since Keto is hot and people are always looking for recipes, you should add a tag or two to the video description so it will come up in keto soup recipes or keto mexican recipes or whatever. I'm living in NM and have been for a few years. I'm glad I found this video and I'm definitely going to make this soon. I'll share it too. Thank you!

@@marcyinspired1442 You're welcome. I shared a few of your recipes with my Keto friends on a low card dieting forum. The queso recipe is keto and the chile relleno one is pretty keto. If you substitute coconut flour for the white flour, I think that's all that is needed to make that totally keto. Your beef barbacoa is also keto (can't remember if it needs an adjustment.) If you aren't familiar with what Keto doesn't allow, it's white flour, any kind of sugar (but there are lots of sugar substitutes that we can use), starchy veggies, most fruit (berries and melons can be eaten sparingly), bread, pasta, potatoes, peas, corn, milk (lactose is a sugar that spikes insulin in the body), and that sort of thing. We use things like heavy whipping cream in exchange for milk or maybe the evaporated milk (Oh yeah; that was the thing in the barbacoa), or unsweetened Almond Milk, or even half and half. And we use almond meal/flour, coconut flour, and other things to work around white flour. You really deserve to have your channel go viral. It's that good. And you are so likeable.

Looks Delicious! That is kind of sauce we make for green chili chicken enchiladas Here in NM only a little thicker and added onion and sour cream.The slightly fried corn tortillas are layered in a casserole dish with this Creamy sauce on top and cheeses of your choice. Then put in the oven for like 20 minutes. Amazing!!

I love chili relleno. Would absolutely love the soup. I was watching Patti Jinich and when she put a chili relleno in a tortilla as a taco, my mind was blown. So I tried it and it’s delicious.

You need to try a Traditional Chili Relleno (deep fried) with the stem removed and rolled into Burrito with Beans, Cheese and Salsa.😋

Marcie quick way to roast chilies. My husband usually buys me 25-50 pounds of green chilies for freezer. First h grilles on outside grill bags in plastic bags between us he grills and pills for me I devein them and ready to bag for freezer. Takes us about 2-3 day to do 50 pounds. The grill allows us to use for perfect rellanos. When we used to have them roasted at the stands they would fall apart. Still way they come out perfect. Really appreciate all your great recipes. All are really delicious😊. Yummy!showing my kids these too. So appreciate your videos 😊😊.

I KNEW you were from New Mexico!! I am a Chicagoan who was transplanted to Las Cruces in 1995. I moved back to the midwest, but missed New Mexico so much, I moved back in 2010 and have never left! I currently reside in Las Vegas, NM but will probably move back to Albuquerque in about six months. Also, do you remember Tegmeyers green chile enchilada soup? I made my own version since they closed. I sure do miss it! Have you ever made that?

Marcy I love your videos, they're the best!! I don't have any Chiles, Hatch or otherwise, so would it be ok to use Poblano peppers? I only buy Poblano because I make a lot of chile rellenos. Hubby made this today, with poblano peppers. My dad stated, "Well, that was pretty tasty!" It had a rich flavor, a bit spicy perhaps because the peppers were a few weeks old, though. I'd recommend doubling the recipe so you get 2 meals since it felt like a bit of work, what with peeling the peppers properly. And perhaps cubing the chicken because the shredded chicken was a bit tangled up. But we'll definitely be making it again! Thanks for the recipe and showing how to make it!

I'd "recommend" throwing all the poblanos away and using ONLY green chiles from NM Hatch or Mesilla Valley.

Can you rec a farm that can do mail order chiles. Lived in Cheyenne, WY for 65 years before moving out of state to be closer to kids and grandkids. Sorely miss the U-Hauls every fall and the roasters where I would fill the freezer with chile and my Suburban smelled like chiles for a month. Used to buy in quantity from Biad but think they sold out. You mentioned Lujan but cannot get the link to work for the web or FB. No-one in the Pacific Northwest has any idea what green chile is. Any recommendations appreciated and love your work. Thanks

I noticed the same thing. The farms in Hatch don't really have websites. Try Grajeda Farms Hatch Chile Market. You can order through their facebook page or call them directly at (575)621-1763 Thanks so much for the comment. I hope you can get some real green chile where you live soon!

You're going to love it. As for the bowls, believe it or not, I got them at the 99 cent store! This was quite a while back, though. But every once in a while, you'd be surprised by what you might find there.

I've been wanting to get a dutch oven, but wasn't sure how practical they are with glass stovetops. Have you had any problems? Is it just a matter of being very careful? Thanks! I think we're going to make this soon, with poblanos (as another person said).

Glass stovetops are definitely not ideal, but I still use both ceramic and cast iron cookware on my stove all the time. I'm just careful not to scratch the surface when I'm placing it down. I haven't had my dutch oven very long, but I absolutely love it and have had no problems whatsoever. Thanks for checking out my video, Loraine. I'm excited for you to try the soup.

What is a good substitute for NM chilies? We can only get fresh poblanos. Sometimes, we can find dried NM chilies. Also, my stove doesn’t have a gas burner. Would cooking them under the broiler, and rotating them do the job?

There really isn't a good substitute for Hatch green chile, but Anaheim would be the closest. I don't know where you live, but before substituting, I would check the frozen section. Look for Young Guns brand. Their chile is grown in Hatch. Or, better yet, 505 Southwestern now has it in a jar. You can even order it on Amazon. I have a jar in my refrigerator at all times. You wouldn't have to roast it either, because it comes roasted and peeled. Should you find it fresh, you can definitely roast it under the broiler. I don't have a gas stove either, so I use a comal over the burner.

I'll have to lower the threshold even more. A certain TX grocery chain sells canned Cream of Poblano condensed soup. I'll just add a can (or 2) of diced chiles, can of cooked chicken, 1/2 the required liquid, then the cubed cream cheese, and all the rest.....with spices.

This I believe is Tex Mex. No, real Mexican food isn’t laden with cream cheese, cheddar cheese, or anything like that. It’s fresh and beautiful.
