Hi everyone, today I'm going to show you how to make a Chinese eggplant dish with spicy garlic sauce. In Chinese restaurants, eggplant is usually deep-fried first, but I will show you in this video how to make an equally delicious eggplant dish without using a lot of oil, and making it a healthier version of this popular Chinese dish.

🍆 Ingredients
Small piece of ginger, grated
Garlic cloves, minced 4
Red chilli 1-2
Chinese long eggplants 1-2
Vegetable oil 1 tbsp
Salt 1/2 tsp
Soy sauce 1 tbsp
Maple syrup (or sugar) 1 tbsp
Chinese black vinegar (or rice vinegar) 1/2 tbsp
Corn flour 1/2 tbsp
Water 2 tbsps
🍆 Methods
1. Preparing the ingredients: mince ginger and garlic with a grater or microplane, finely chop red chilies into small pieces, peel of the skin of egg plants (Chinese long eggplants are tenderer and tastier than normal eggplants, you can buy them in Asian supermarkets) before cutting them into long strips.
2. Making the sauce: Mix soy sauce, maple syrup, vinegar and corn flour in a small bowl until no lumps, add in water and mix well.
3. Cooking the aubergine: Add 1 tbsp of oil in a frying pan, when the oil is hot, add in the aubergine strips, cook on medium heat until aubergine becomes soft and translucent (do not add more oil when cooking),transfer them into a bowl.
4. In the same pan, stir fry minced garlic, ginger and red chillies with a bit of oil, then turn to low heat and add in the sauce and the cooked aubergine, stir fry for another minute until the sauce thickens.
