Best Homemade Lao Gan Ma Chili Sauce Fried Rice (Cooked in 15 Minutes)
Ingredients:
250 gr Leftover Cooked Jasmine Rice
50 gr Diced Cabbage or Any Veggies
1 tbsp Shaoxing Wine
Bacon/Chicken/Beef/Prawn (add as desired)
2 cloves Garlic, minced
1/2 cm Ginger, minced
1 Scallion (white and green parts), minced and sliced
2 tbsp Homemade or Store-Bought Lao Gan Ma Crisp Chili Oil
2 Eggs (divided into yolk and white)
1 tbsp Soy Sauce
50 gr Canned Beans (Kidney, Adzuki, White Beans) Optional
Seasoning: Salt, Pepper, Mushroom Stock
2 tbsp Oil
Instructions:
1. Scramble the egg white, add salt and pepper, and fry until slightly browned; set aside.
2. Cut the bacon into strips and stir-fry with salt and pepper.
3. Beat the egg yolk and pour it into the cooked white rice, add salt and pepper, mix well.
4. Heat the oil and add garlic, ginger, and white scallion; fry until fragrant, then drizzle with half tbsp of Shaoxing wine.
5. Add diced vegetables and stir-fry.
6. Add the rice, stir-fry on high heat. Add the fried egg white and bacon, use a spatula to press and stir-fry to fully heat up the rice.
7. Use overnight rice for the best results, as freshly steamed rice may become too viscous and lumpy when fried.
8. Add Lao Gan Ma chili sauce and stir-fry.
9. Finally, sprinkle a handful of chopped green onions before serving.
10. Turn off the heat, transfer to a serving dish, and enjoy your quick and delicious homemade Lao Gan Ma Chili Sauce Fried Rice!
