Recipe:
6-8 pounds Chicken Breast boneless skinless
Kikkoman Teriyaki Marinade Sauce 4 cups
For the sauce:
1.25 cups low sodium Soy Sauce
1.5 cups packed brown sugar
1/2 cup of honey
2.5 teaspoons of siracha
1.5 oz of hoisin sauce (2 Tablespoons)
1.25 teaspoon Garlic Powder
1.25 teaspoons of Ginger Powder
4.8 Cups of Chicken Stock
1/3 Cups of rice flour
1 tablespoon of tapioca flour
For the veggies (you can basically do what ever you want when it comes to the veggies. Feel free to add ore if you want. Zucchini, water chestnuts, cauliflower, you get the idea!!
1 pound of sliced onions
1 pound of green bell pepper
1 pound of red bell pepper
2 pounds of sliced carrots
2 pounds of sliced celery
2 pounds of Cabbage sliced
1 pound of green onions Sliced thinly
2 Pound of Broccoli florets (if you have the stumps use that too)
For the slurry:
Either 100% cornstarch or a 50/50 mix of cornstarch and rice flower.
A little bit of water or soy sauce ( but be careful not to se too much as you don't want your chicken to be salty)
Marinate the chicken overnight in (Kikkoman teriyaki sauce) in the fridge. Use enough to cover your chicken breast fully. The next morning cut the chicken in strips against the grain and pour all the sauce that was used for the marinade in a pot. Add the rest of the sauce ingredients to that pot and heat on med till the sauce has thickened slightly and the flavors have married.
To cook the chicken, create a water, rice flour, and corn starch slurry. Coat the chicken in this slurry and pan fry (350f in a little oil) till the chicken is just cooked through. Don’t overcook the chicken.
For the veggies. In sesame seed oil and sunflower oil stir fry each veggie and place in a bin. Once finished mix the veggies to combine then remove and drain out any excess water that has accumulated
To serve fresh plate up the veggies, the chicken, and some sauce along side of some cooked rice. To freeze simply portion in freezer safe bags and store in your freezer. I use a vac master to vacuum seal my product and this gives me long term storage. Also I can take the bag from the freezer and boil it for 20 minutes to heat up my dinner. It's fast and makes clean up a breeze!!
To reheat your frozen Teriyaki Chicken just let it thaw and heat on the stove top on medium low heat. Serve with rice. If you use the kind of bags I use you can just boil the bag and cut it open to serve.
