A nice little repair to do today. Unfortunately the customer cut a piece of meat and there was a bone left inside. The tip was already broken off.
I corrected the tip by removing material from the spine to keep the geometry. I also repolished the tip until the mirror effect so that everything is uniform. The cutting edge was done on a Naniwa super 5k, the cut is delicious! No need for thinning, maybe in 3~4 sharpening session.
