This cake can also be made in a gluten-free version.
On the sponge cakes, use gluten-free flour, and in creams, you will use gluten-free chocolate.
INGREDIENTS
SPONGE CAKES
- 6 egg whites
- 4 egg yolks
- 140 g sugar
- 130 g flour (75 g vanilla sponge & 55 g cacao sponge)
- a pinch of salt
- 20 g cocoa
- 4 g baking powder
- 30 ml of vegetable oil
CHOCOLATE CREAM
- 120 g milk chocolate
- 100 g whipped cream (hot)
- 3 g gelatin granules
- 2 tablespoons water
- 120 g whipped cream (from the refrigerator)
- 4 Oreo biscuits (optional)
BERRY CREAM
- 175 g frozen berries
- 90 g sugar
- 4 g gelatin granules
- 3 tablespoons water
- 160 g whipped cream (from the refrigerator)
- 125 g fresh raspberries (optional)
CHOCOLATE CREAM
- 120 g milk chocolate
- 100 g whipped cream (hot)
- 3 g gelatin granules
- 2 tablespoons water
- 120 g whipped cream (from the refrigerator)
SYRUP
- water
- sugar
- flavors according to preferences
CAKE COATING CREAM
- 250 g whipped cream
- 250 g Mascarpone
- 100 g powdered sugar
DECORATION
- chocolate strawberries
- natural roses
- chocolate balls
