150g unsalted butter, 150g sugar, 2 eggs, 4ml vanilla extract, 200g cake flour, 20g cocoa powder, 3g baking powder, 100ml milk
230g sugar, 80ml water, 1 vanilla bean, 150g egg whites, 450g unsalted butter, 80g dark chocolate
sugar syrup ( • 초간단! 케이크 설탕 시럽 만들기 | 한세 )
1) Leave all the ingredients in room temperature to eliminate the coldness.
2) Heat up the oven to 180°C and cut the paper foil to size 1 mold and put it in.
3) Beat the unsalted butter.
4) Add sugar and mix it together (about 2 mins)
5) Add the egg one by one and mix it together.
6) Add vanilla extract and mix it (please whip it for more than 2 mins using the electrical whisk)
7) Sift cake flour, cocoa powder, baking powder and mix them together.
8) Add milk by dividing into two times.
9) Fill the mold with batter and bake it for 40~45 mins.
10) Cut the cooled cake in half and trim the top part evenly.
11) When the cake is cooled enough and the butter lost its coldness, make butter cream.
12) Cut the vanilla bean in half and get rid of the seeds.
13) Put the sugar and water in a pot and put it on low heat.
14) When the syrup is boiling, whip albumen of the egg in the bowl.
15) When the syrup's temperature reaches over 118°C, add it to the whipped albumen.
16) Keep whipping it.
17) When the meringue is warm enough, add butter in steps to whip it.
18) When the butter is all added, it may look like it's separated, but keep whipping it.
19) Divide the butter cream in half and add melted chocolate to one half and whip it together.
20) Leave it in the refrigerator for 20~30 mins.
21) Please make sugar syrup while waiting (refer back to the hyperlink on the top)
22) Beat the hardened cream and coat sugar syrup on the top.
23) Even the chocolate cream and vanilla cream on the top and repeat the syrup part.
24) Put the cream on top thinly.
25) Cover chocolate cream all over the cake and even it out.
26) Decorate with leftover cream (It's better to leave out some cream out before icing)
