Hello there again! I have started sharing some Valentine ideas last week and this is no different. What a better way to surprise your loved ones or sell them on Hearts Day with these Filipino shortbread cookies aka Polvoron covered with chocolate and decorated with attractive, crunchy and cute heart shaped meringue cookies!
I used to make this chocolate coated polvoron with my mom. Back then, I used royal icing as decorations.
Polvoron is a Filipino version of shortbread where flour is roasted instead of baked. Then added with sugar, powdered milk and butter. Shaped with a round mold and wrapped in Japanese paper.
Then recently came a new variant called Chovron short for chocolate coated polvoron.
For this recipe I am sharing, I made some tweaks to improve it. I added some white chocolate for easy handling and compacting in the mold. I added also diced dried mangoes and young coconut that are seldom used as flavours. Then used a circular silicone mold when coating with chocolate to give that shiny finish look.
I used also the heart meringue cookies that I made last week as decorations. The result is awesome! I hope you will like it.

Ingredients:
Polvoron
3 cups flour
1/4-1/3 cup sugar
1 1/2 cups skimmed milk
3/4 cups unsalted butter
1/2 cup white chocolate
1/3 cup diced dried mangoes
1/3 cup diced dried young coconut
2 tbsp ube flavouring
Coating:
400 g melted white chocolate
400 g semisweet chocolate chips
3 tbsp shortening
Decorations:
