This was insanely good. A soufflé is known as one of the most difficult things a cook can pull off. It really is tricky to make, but damn, do they taste great. There's also something about using a beautiful, fresh cacao pod that makes this even better. In additional to making a beautiful chocolate soufflé that you can follow along with here, we're making a crème anglaise, a light pouring custard used as a sauce for a number of desserts. Don't worry! You can make this exact recipe without the cacao pod. Follow for a delicious soufflé below:
Soufflé Ingredients:
Softened butter
1/4 cup sugar
2 oz bittersweet chocolate
1 tbsp butter
1 tbsp all purpose flour
4 tbsp cold milk
2 eggs (separated yolks/whites)
1 tsp cream of tartar
1 tbsp sugar
1. Brush your ramekins with butter, brushing up the sides to help the soufflé rise.
2. Add your 1/4 cup sugar evenly across the ramekins, and evenly coat the insides. Set aside.
3. Over a double boiler, melt chocolate and set aside.
4. Add butter into a small pan, followed by flour. Whisk until well-combined over medium heat.
5. Add cold milk, then whisk and fold into chocolate mixture. Set this aside.
6. Separate out your eggs, discarding one yolk.
7. Add egg whites and pinch of cream of tartar to mixing bowl, and when you reach small peaks add white sugar. Stop mixing when it reaches stiff peaks.
8. Gradually fold the meringue in, bit by bit, into the chocolate mixture.
9. Fill your ramekins with the mixture, leveling off the tops.
10. Bake at 400 Fahrenheit (200 C) for 12-15 minutes until risen.
Crème Anglaise Ingredients:
1 cup heavy cream
1 1/2 cups whole milk
1/2 cup sugar
2 tsp vanilla bean paste
6 egg yolks
1. Combine cream, milk, sugar and vanilla over medium heat until the sugar dissolves.
2. Separate out egg yolks and whisk until lighter in color.
3. Temper in some of the warm milk mixture while still whisking the eggs. This will bring the eggs up to temperature. Then, combine everything back into the pan over medium heat and whisk until thickened enough to coat the back of a wooden spoon. Pour over soufflés and enjoy!
