Start off your Saturday morning with some hearty chorizo and eggs tacos. This Mexican spicy sausage adds a kick to your breakfast tacos to last the whole day.
INGREDIENTS
oil
1 pkg (8 ounces) uncooked Mexican chorizo
4 Eggs
1/4 cup of Onion (chopped)
1 Serrano Pepper (diced)
Salt and Pepper to taste
2 tortillas
DIRECTIONS
Preheat oil In a medium skillet over medium-high heat. Add chorizo, cook for 5-8 minutes, crumbling with the back of a spoon until fully cooked. Add onions and Serrano until tender and translucent. Reduce heat, add eggs, stir to thoroughly combine, cook until eggs are set, serve on warm tortillas with a side of salsa.
