This was one of the stews in my college meal prep for my husband (then boyfriend) and I. When I chanced upon some fresh garden eggs and some extra sweet pona yams a few weeks ago, I knew without a doubt that I had to make this koobi studded chunky garden egg stew. Oh what a delicious trip down memory lane this was!
Ingredients:
0.8 lb Koobi (dried salted tilapia)
1 large onion
4 medium sized tomatoes
1/2 cup palm oil
2 scotch bonnets (only because they were not hot enough)
3 lb white garden eggs
1.2 lb smoked mackerel
6 eggs
salt to taste.
