Chingri malaikari is an iconic Bengali prawn curry made by cooking large tiger prawns (bagda chingri) or giant freshwater prawns (golda chingri) in a super-subtle, super-creamy coconut-milk sauce. Don’t be fooled by the elegant appearance of this well-loved Bengali treat-chingri malaikari is looks deceptively complicated to cook, when in reality it is easier to make than even chicken or egg curry!
Ingredients of Chingri Macher Malai Curry:
1. Bagda Chingri mach/ Prawn / Shrimp (5 pcs).
2. Coconut milk (1.5 cups).
3. Chopped onion (2 medium sizes).
4. Chopped tomato (2 medium sizes).
5. Ginger paste (½ tsp).
6. Garlic paste (½ tsp).
7. Garam masala powder (1 tsp).
8. Cumin powder (1 tsp).
9. 1 bay leaf.
10. 2 dry red chilli.
11. Turmeric powder (½ tsp).
12. Garam masala.
13. Kashmiri red mirch powder (¼ tsp).
14. Salt (as per your taste).
15. Sugar (as per your taste).
16. Slitted green chilli (5 no).
17. Mustard oil.
18. Ghee (1 tsp).
Methods of How to Make Chingri Macher Malai Curry:
1. Take Galda Prawn or Bagda Prawn and marinate the chingri mach with ¼ tsp turmeric powder and ¼ tsp salt. Keep it for 5 min.
2. Heat the pan and add mustard oil in it. Fry the prawns. Keep aside.
3. Add Garam masala, 1 bay leaf, and 2 dry red chilli. Fry for 10 sec.
4. Add chopped onion. Fry till become golden brown.
5. Add ½ tsp ginger paste, and ½ tsp garlic paste. Fry for 1 min in medium flame.
6. Add chopped tomato and fry for 1 min in medium flame.
7. Add 1 tsp cumin powder, ½ tsp turmeric powder, ¼ tsp kashmiri red mirch powder, ½ tsp salt, and ½ tsp sugar. Mixed it well.
8. Add some water and cook for 2 min in high flame.
9. Add ½ tsp garam masala powder and cook another 30 sec.
10. Add fried prawns. Cook for 1 min in high flame.
11. Add 1.5 cups coconut milk. When boiling cover it for 5 min in medium flame.
12. After 5 min taste it.
13. Add ¼ tsp garam masala powder and 1 tsp ghee. Mixed it well.
14. Put off gas oven. Cover it for 5 min again.
15. Serve hot Chingri Malai Curry with hot steamed rice or Pulao.
