Hi friends. Today I share a pickle(నిల్వపచ్చడి) with cluster beans(గోరు చిక్కుడు). I got an idea to prepare pickle with cluster beans. It came well that's why i want to share with you. With perfect

Ingredients :
Cluster beans - 1/4 kg
tamarind - 50g
salt - 50g
chili powder - 50g
oil - 50g
hot water - Required for soaking
mustard seeds - 2 tsp
fenugreek seeds - 1/2 tsp
mustard seeds - 1 tsp
cumin seeds - 1 tsp
red chili - 6
garlic cloves - 10 to 15
Hing - pinch
Procedure :
Take cluster beans(గోరు చిక్కుడు) wash well and dry completely without any moist. Cut into small pieces & take in a bowl. Take tamarind will soak in hot water. Take a kadai add 1 tsp mustard seeds & fenugreek seeds fry well & cool completely.
Take same kadai add 50g oil add half portion of cluster beans pieces fry till soft & change the color. Fry the remaining portion place in a bowl, cool completely. Use remaining oil for tempering. Add mustard seeds, cumin seeds, red chili, garlic cloves & Hing fry well, cool completely.
Now take soaked tamarind extract juice, strain well to get clear one. Take kadai add oil after heating add tamarind juice fry up to thick juice, cool completely.
After cooling all ingredients prepare a pickle. First make a powder of fenugreek & mustard seeds.
In cluster beans bowl add salt prefer rock salt (make a powder in mixy ) , chili powder, 1/4 tsp fenugreek mustard seeds powder, tempering, tamarind pulp adjust the salt & chili powder according your taste, finally prepare a cluster beans pickle (గోరు చిక్కుడు నిల్వపచ్చడి).
After 1 week we can enjoy the pickle with ghee & hot rice. Store in glass jar without any moist.
