Citrusy Granola Recipe
Prep. Time: 15 minutes
Cooking Time: 30 minutes
Makes: 6 cups (12 servings of ½ cup)
Ingredients:
· 4 cups large flake oatmeal
· 1 cup sliced almonds OR other nuts
· 1/2 cup sunflower OR pumpkin seeds
· 1/2 cup wheat germ
· 1/2 tsp cinnamon
· ½ cup brown sugar
· 1/3 cup honey OR maple syrup
· 1 lemon
· 1 orange
·2 cups dried fruit (finely chopped, if necessary)
Directions:
1. Preheat oven to 350 degrees and lightly spray a baking sheet with non-stick cooking spray.
2. In a large bowl, combine oatmeal, nuts, seeds, wheat germ, and cinnamon.
3. In a saucepan, combine brown sugar and syrup. Bring to a boil and remove from heat.
4. Grate zest from citrus fruit and squeeze juice from each. Add zest and juice to saucepan and stir in.
5. Pour saucepan contents over the oat mixture, toss gently to distribute evenly, and spread granola over a baking sheet.
6. Bake for 30 minutes, stirring every 10 minutes, until golden brown. Let cool.
7. Add dried fruit to cooled granola and store in an airtight container.
Serve granola topped with yogurt or milk, adding fresh fruit, if desired.
