I worked at TWA’s NYC HQ in those wonderful years. We actually had a Director of Food Services on staff!

Omg subscribed. Thank you!!!! God to this day I’d kill for Pan Am’s “cherries jubilee”. It was 1987 and I can STILL taste it. I don’t know how they did it with no open flame.

I flew on a creaky TWA 747-100 from JFK to Rome in 1991, and the meal was Salisbury steak, but it definitely wasn’t this version! It was more of a Hungry Man TV dinner, with peas and mashed potatoes. The Italian guy sitting next to me refused to eat it, so I had two portions! Even when hot airline meals aren’t great, I still love them.

Yeah, it all went down hill a bit. I was lucky enough to have the 1970's version. Back in those days they still had a Cabin Services Manager on every flight!

Thankfully, I was also able to fly on Pan Am in Clipper Class in 1990, a bit before they collapsed. The food was delicious-veal and duck served on china-and they gave me champagne. I was 18! The Sharper Image had a $25 certificate you could get that allowed upgrades on certain economy fares, so I saved up and went to Europe just before college.

I crafted my own version of this meal last night and it was delicious! The potatoes were especially well received, so thanks for the demo on those. I served a mixture of peas (last harvest from the garden) and carrots, since I had peas with my TWA Salisbury steak in 1991.

As a flight attendant I have to tell you the meal size has NOTHING to do with the spices … it’s because you are Pressurized in a tube going 600 miles an hour and your taste buds can not taste as well as when on the planets ……->-

I worked in the industry too. All those meals we were forbidden from removing from the aircraft, tasted best of all! :)
