Ingredients:
Crust:
40g pecans, finely ground
40g caramel biscuits
40g all-purpose flour
20g brown sugar
40g butter, melted
Filling:
400g cream cheese
250g mascarpone
150g white chocolate
2 eggs
20g corn starch
Topping:
250g strawberries
120g raspberries
Chocolate decorations (optional)
Instructions:
Preheat the oven to 160°C (320°F). Finely grind the pecans and caramel biscuits, and mix with flour, brown sugar, and melted butter. Press the mixture into the bottom of a 20 cm springform pan.
In a bowl, mix cream cheese, mascarpone, eggs, and corn starch until smooth. Melt the white chocolate in a double boiler or microwave until smooth, then let it cool slightly before mixing into the cream mixture.
Pour the filling over the crust and bake for approximately 60 minutes. The cheesecake should be firm around the edges with a slightly wobbly center.
Let the cheesecake cool completely in the pan, then refrigerate for at least 12 hours.
Crush half of the strawberries and raspberries and pour over the cheesecake. Decorate with the remaining fruit and chocolate decorations. Enjoy!
