October 2014 - wish we can go back to those days but Daddy Jack was great and his dishes were always mouth-watering, especially this rollatini. Pans are still the same, shot the video at his first restaurant in New London, any yet his videos will always be timeless. ❤️

SOOOOOO AWESOME!!! MY HUSNAND AND I MADE THIS A WHILE AGO AND HAVE BEEN MAKIN IT THIS WAY EVER SINCE. I ESPECIALLY LOVE THE ADDITION OF PESTO AND CREAM SAUCE IT BRINGS THE WHOLE DISH TOGETHER. THAT FIRST BITE IS LIKE WATCHING ANGLES SING. I'M SUCH A FAN THANKS AGAIN JACK!!!

I have a secret no one else seems to mention about eggplant. Pick oblong eggplant even on both ends, not bulbus, and you will find no seeds.

That looked good Jack. Josh said no on the Cream Sauce but I say yes. Instead of the Parmesan I would have used Gorgonzola. But that's just me. Either way that was a fine dish.

Wow! I agree the white sauce isn't necessary but the rest of it sounds like a ambrosia in your mouth -- many times better than recipes with 10 times more views. ( I guess it goes to show that most Americans like plain food -- which is a shame if you ask me.) I used to live in Newport, RI so I know the area and New Englanders have among the most discriminating taste buds of anywhere in the country.
