Classic Gazpacho
INGREDIENTS
2 white bread slices
3 Tomatoes
1 Red capsicum
1 Yellow Capsicum
1 green capsicum
1 medium Cucumber
8-10 fresh basil leaves
8-10 garlic cloves
2 TBSP white wine vinegar
2 TBSP Virgin Olive oil
salt to taste
pinch of sugar
8-10 ice cube
Topping
Fried croutons
Cherry tomato
1 Small onion chopped
1 TBSP English Cucumber chopped
fresh basil leaves
5 drop olive oil
Method
1. Cut the white bread slices into 1 inch. Transfer into a bowl.
2. Add the tomatoes into the same bowl.
3. Cut the red capsicum, repeat the same with yellow capsicum and green capsicum. Transfer into the same bowl.
4. Peel the cucumber and roughly slice them. Transfer into the same bowl. Add the mixture into a grinder jar, add basil leaves, garlic cloves, salt, sugar, white wine vinegar, virgin olive oil, and ice cubes. and grind into a fine mixture.
5. Transfer the mixture into serving bowls, garnish with fried croutons, basil leaves, cherry tomato halves, chopped onion, chopped cucumber.
