This is what you do as an adult. You take the time to introduce kids to good ingredients, proper techniques, and demonstrate how they can make good, healthy, and hearty food for themselves and their loved ones. It isn't a mystery... they just need the right mentors and teachers to show them and guide them. This applies to any area of instruction. Good teacher + willing student + patience = the next generation's success. Brilliant!

I so wanted to meet this incredible chef. I always wanted to take a vacation up to Connecticut and eat at his restaurant and just talk with him. You are very missed Daddy Jack. I am so inspired by your awesome recipes and cooking techniques and they will continue to teach me through the years. Nobody did it like Daddy Jack Chaplin. I bought some of his Blackening seasoning too and it is really good.

Pre Covid I had a plan to bring Jack a bushel of New Jersey Tomatoes as a thank you for his great work. I deeply regret that I never made a more serious effort. Just another example of not letting a demanding work schedule interfere with what would bring you joy..rest peacefully Jack.

Peppers come on Chappy no no. Im from the Cape and that's not how my grandpa did it. He was a true Cape Codder quahogs, salt pork, onion a little celery, potato diced small, whole milk, little cream, pepper, and that's about it. Fresh baked bread to go with it. I love the way you cook. It reminds me of when I cooked in a kitchen and when I lived in the wilderness. Just quick, good ingredients, straight to the point, wasting no food. Stock is life. That is what good food is all about. Something you can cook at home and in restaurants. Amazing that this is being documented. Hats off to you chef.

Every movement he makes has a purpose. He is efficient as any chief I've ever seen. I used to run mills next to a guy who was a master at the craft. He never seemed to be working hard but put out a lot of work. I called him the silent assassin.

Hey Chef Jack. I left the industry about 10 years ago because I got tired of all the yelling and unessessare screaming by arragont chefs. I absolutely love watching your video's and am making my way through the selections now. My fiance and I have plans to go to America and we'll definately be stopping in to eat hear and meet you. It's really great what you're doing and the way you present the vid's is truely unique. I hope the advertisers are hooking Mr. Jack up because I love this cat! I am a 60 year old man, an organic gardner, a workout/exercise fanatic who eats super healthy. I've always been able to cook, but these past holidays it became a very addictive hobby. I rolled on the floor laughing when dude scooped out BACON GREASE to start his chowder base, lol! When I was growing up we saved it too but I've never seen a celeb chef drop it like that! I am making this recipe for sure...and I will garnish with an 80mg Lipitor cuz I'm going with the bacon grease! Well done!

Done! Turned out great! That fennel rocks in this dish. Also I fried up the bacon and used the grease with a touch of olive oil and butter. At the end I crunched the bacon into it. Thanks again Jack!

you are a great teacher and I really enjoy the restaurant style cooking because I am more of a semi-professional chef myself. I love how you show using everything with no waste. I never like or post comments, but for this man, I'll make the exception. This recipe is my go reference. Just like Jack nothing is measured. Everything is by feel. For the hatters, I'd rather eat from this man's hands then any gloved operation. One last tip, dontt skip the tarragon
