Yay team lefty! I worked in a restaurant years ago where all of our kitchen knives were sharpened with an edge that benefits right handed people, but the three cooks who did most of the prep work were all left handed (including myself). We all hated the knives.

Well, I feel y’all’s pain. I’m a twin myself, my brother and I would have to share often. Toys as kids to sharing our very first car, and even a bedroom (separate beds, thank God!) up to 20 years old until we joined the Marines. Sharing wasn’t always bad, we were close as most twins are but it definitely kept our bond even more tight. Twin Power. Tight Lines, Fish On!

I like to leave the skin attached at the tail flip the filet over and take the meat off the skin. It allows you to use the backbone or head as a handle instead of trying to pinch the skin and hold it.
