So we've put together two recipes today. I know you're a big fan of curry. I love curry. I'm a big fan of cream puff shells as well. They're so easy. It's water, butter, flour, & eggs. They're really versatile. We're going to get started w/your dish, this is curried chicken salad. We'd love for you to walk us through some of the simple ingredients. The ingredients are mayonnaise, greek yogurt, a little honey, & lime juice. Combine those together to get your base. A little creamy, a little acidity, you get the great creamy flavor & a little sweetness in there. Once that's incorporated, add some curry powder. You can buy a good curry powder or make your own. I started experimenting with that. You toast up your favorite spices & put them in a spice grinder. Curry means spice blend. Like using fresh herbs, when you're using fresh curry the flavor is much more robust. If you're not a huge curry fan,leave out the curry. It would be a beautiful chicken salad even without the curry. Then add some shredded chicken. I've poached this chicken & shredded it, but if you had a rotisserie chicken, left over. We're going to add some golden raisins. I love golden raisins, I think they present more nicely. Then we do a little bit of red onion, & some crushed cashews. Then for even more crunch, some apple I've just done in a very small dice. Some Granny Smith. Leave the peel right on & then we're going to stir that up until it's incorporated. The great thing about this dish is that you can make the shells ahead of time. You can make them the night before, you can make this chicken salad the day before, so it absorbs all the flavor. Then you're a lot less stressed when friends come for lunch b/c you can just assemble w/a green salad at the table. So then you just cut the top off of the shell. So it's almost like cutting the top out of a bread bowl if you were making soup. On the inside of your cream puffs, you have a hollow. It's an automatic little bowl. Spoon the curried chicken salad into the shell. Put the top back on. What would you serve this with, Clinton? I might serve this with a light green salad. Just some greens tossed in a simple vinaigrette, salt & pepper. Put it on the side or you could serve it with other sandwiches. These are my strawberry basil tea sandwiches. They're made with Devonshire cream. Devonshire cream is a clotted cream, take unpasteurized milk & put it in a shallow pan & let it sit for about 18-24 hours & the solids will rise to the top & that's what you scrape off & that's what you serve. Now, you're going to start w/your clotted cream & get this into a bowl, to add some flavor, we're going to add some brightness & a little bit of acidity much like w/your chicken salad. Some lemon zest, some chopped basil, fresh is always the way you want to go with this b/c it's going to give you that really nice flavor & also a little pop of color. What I also like to recommend, even if you're going to be making this a day ahead, mix together the clotted cream along w/basil & lemon zest, & leave this in the fridge overnight. The longer it marinates in those flavors, the more robust it becomes. We're going to start by building the sandwich, get some loaf bread from your local market or bakery, make sure you get the very thin slices. Open these up, grab your small spatula, & put some clotted cream. Not too much clotted cream b/c it is rather fattening. You want to go with a very thin layer. It's got a very high butter fat content. Next, we're going to slice strawberries. The nice thing about strawberries is that we can get these year round. There was a time when you could only get strawberries in the summer, but now they're imported from all over & California is producing these by the bushel. We're going to add a little pop of color & a texture with very thinly sliced cucumbers. I like to use a mandolin for these because then you get them really razor thin, almost like you can see through them. The other key about this type of sandwich, don't over fill it. The idea is that you should really be able to eat a tea sandwich w/one hand in a couple of bites. The other thing is, we're cutting the crust off the sides. Now the other rule of thumb now that you have a little square, just make an "x" b/c then you're going to get perfect triangles that way. Then just serve these. The beauty part of a tea sandwich, if these are not ingredients that are your favorites, you can substitute these with just about anything. I like a little crème fraiche & smoked salmon. You could also do egg salad with these. Anything that's your favorite filling becomes the perfect tea sandwich. Something that is easy & will add a lot of flare to your spring entertaining table.
