This crumbly cockle dumpling is a real treat! It evokes childhood memories, encourages nostalgia and good conversations at the family table. Make it with love, eat it with health!
Ingredients:
- 50 dkg of potatoes
- 25 dkg flour
- 1 tsp salt
- 4 tablespoons of natural cocoa powder
- 4 tablespoons of powdered sugar
- 5 dkg of butter
Preparation:
Allow the boiled potatoes to cool, then puree them. It is important that there are no large pieces in it, we should get a homogeneous, fine mass. Add the flour and salt to this and mix thoroughly. When the dough has come together, cover it on a floured board and roll it out for approx. 1 cm thick. Then cut into squares of equal size (6-7 cm). The cocoa filling is much tastier if it is softened with butter in addition to powdered sugar. When you want a slightly spicier filling, mix the cocoa with plum jam. From this mixture we make approx. a teaspoon for the squares. Then we form them into balls, taking care that the filling cannot leak anywhere during cooking. Roll noodles from the dough pieces that fall on the sides of the squares and cook them as well. If possible, put the dumplings into the boiling water at the same time and carefully. Do not stir them, and if they are thrown up by the water, then filter them. Never wash the boiled dumplings, because then the breadcrumbs will not stick to them!
While the dumplings are cooking, prepare the crust. We use our fingers to scrape out the inside of stale bread that is several days old. (It doesn't need to be too small to be crispy.) Fry this in a pan with 1-2 tablespoons of oil or butter until golden brown. It will be even tastier if chopped walnuts or almonds are mixed in. When it is browned, sprinkle it with 1-2 spoons of sugar, mix it, and while hot, roll in the freshly filtered, also hot dumplings. It's even tastier if we add jam on the side.
