Try out this recipe for a delicious way to dress up chicken breast! This sauce goes well with any vegetable, but we choose some of our favorites: mushroom, onion, and red bell pepper. We hope you love it!

Coconut Lime Chicken
1lb Chicken Breast
1-2 Limes, juice
Lime zest
½ tbsp Grated Ginger
2-3 Cloves Garlic, fine chop
1 Shallot, fine chop
4-5 Mini Cremini Mushrooms, quartered
1 Red bell peppers, julienne
½ Red Onion, Medium Dice
1 tbsp Fish sauce to taste
2 tsp Sugar
Salt to taste
1 Can of Coconut milk
1 Bunch Cilantro, leaves separated and stems chopped for sauce
Garnish
Cilantro leaves
1 Red Fresno,thinly sliced
Lime wedge
Directions
1.Heat a sautoir pan on medium high heat
2.Pat Dry Chicken Breast with paper towels and season with salt
3.Add enough Neutral oil to coat the bottom of pan and sear chicken until golden brown on both sides, remove from heat
4.Reduce heat to medium, add shallot, garlic, and ginger and lightly toast.
5.Add coconut milk and half a cup of water or chicken stock. 6.Reduce by about half or until thickened
7.Add Fish Sauce, sugar, salt to taste, lime zest and juice, and cilantro stems. Keep sauce warm for plateup.
8.In a saute pan on high heat. Add neutral oil and add onions in and then the mushrooms cook until water is cooked out of mushrooms add peppers in for another 2 minutes. Remove off heat and keep warm until plating.
Plate up
1.Place a nice scoop of rice on plate
2.Slice chicken breast at a bias before placing alongside the rice.
3.Top with the vegetables and spoon sauce around the chicken and around the rice
4.Garnish and serve immediately
