I have had several similar comments about the dough being wet. Please see description box for all the details. If you are using a scale it should be perfect but if you are using cup and spoon then you might have to add a little more flour. It might vary some because everyone measures a little different when using cup/spoon. Also, I used instant yeast. If you are using a different type that requires activating then you will need to use the milk from the recipe to bloom it. Do not add extra liquid. Lastly, all the tips are in the video so make sure you are watching the entire video and it will answer many of the questions you might have. If you don’t have bread flour, you can use all purpose. It will be less fluffy but will still taste amazing 😉 If you’re dough is wet and sticky after you went through all the kneading steps, no worries, just move on to letting it rest.

Also what brand do you use for pandan? The one I use comes out green but as soon as you mix the wet ingredients together, the color fades.

I follow each measurement and steps accurately but once I add the butter it separates and doesn’t form again? I let it mix additional 5 mins. Should I add more flour? This would be my 3rd attempt. ☹️

Excellent instruction video and recipe. I made this twice, used bleached bread flour the first time and I bleached bread flour the second time. Found it to be slighty sticky and added 2 tbsp more bread flour and 2 tsp butter to bring it all together during the second knead. The airy, fluffy and light texture is amazing. Once cooled it’s very much like a dinner roll. I poked a hole on the side and filled it with creamy coconut custard. Yum.

Aimee!! Omg! I tried this today and its perfect! So soft and fluffy!! I filled it with sweetened coconut flakes cooked in left over coconut milk. So yummy!! Thank you for the recipe. This is definitely a keeper. I will try the ube next.

Oh my fluffy balls! First time making bread, followed your recipe and it came out superb. Like many others, my dough was wetter and stickier than yours and I seriously had doubts that it would come out good but I pressed on, and after the final rise, I popped those babies in the oven and hoped for the best 🤞🤞. 20 minutes later, I was drooling from the scent of freshly baked bread. I waited 2 minutes and couldn’t wait any longer for the cooling process so I stuffed one of those hot buns in my mouth. It came out so soft and pillowy. I couldn’t have been more pleased. Made this yesterday and turned out just like yours. My daughter’s first reaction- “wow, it’s just like the video, mom!” It was very soft, fluffy and good, but the coconut and pandan taste was a little mild. I thought it was going to be more sweet like the waffles. On to try another one of your recipes.

Omg Aimee!! I can’t explain to you how happy I am that my bread was a success. Your detailed instructions has helped me who’s not a baker so much. First kneading my bread was very sticky and I’m glad I read your instructions and comments. I added just a tiny bit more flour and yet it’s still sticky. I let it be. 2nd proofing the bread is just right. I used all purpose flour so it’s just a bit dense but still fluffy enough. It was a hit with my daughter. Soooo happy!!

If your dough is wet that's PERFECTLY fine. In fact it's better because your dough will get a much better rise. Avoid the urge to add extra flour. Once the dough rests and the flour absorbs the water the stickiness will go away.

Made this today and it turned out perfect. I've been looking for a soft fluffy bread recipe and for the third time,your recipe is spot on! Glad I found you on pinterest. My boyfriend says the bread is soft like cotton candy. I am so happy with the result. I bake it for the first time yesterday. It taste good. Am super excited. Thank you. My dough is more wet than yours since I use cup measure. I just keep kneading for another 15-20 min or so after the second round of kneading. It finally come out shiny.

Thank you for sharing. They came out just like yours. However i decided to put my spin on it. I filled them with custard cream. It reminded me of some sweet buns i ate in Korea. The fact that this ones were pandan also was a bonus. For those that wonder when exactly did i fill them up, it was right after the 20 minute rest. I flattened each roll with my hand in about a 5 to 6 inch or about 10 cm circle. Then i brought the sides up like you would for a filled steamed bun. Everything else i followed the recipe to a T.

Yes same for everything, except, might want to decrease the final rest time some so it can hold the fillings better. Also, don’t add too much fillings to prevent it from oozing out.

@ emloyo You’re welcome. Unfortunately, the gluten is what makes the buns fluffy and soft. You won’t get the same result with non gluten flours.

Thanks for the amazing video! Just made them and they turned out perfectly! I did end up adding the 1/4 cup of flour since the dough was quite wet. It was still more wet than the dough in your video by the second knead, but came together nicely in the end. It took 2 hours for the second rise. Can’t wait to make more!

I just baked these yesterday and they were so lovely and soft! Although I think the flavour was quite subtle so I might try to change the extract into using real pandan leaves and experiment with the liquid ratios. But never the less thank you so much for this recipe! ❤❤

I only had all purpose flour and after adding about 4 tablespoons of flour on top of the 350 grams that I weighed it finally came out to the consistency of yours on the video. Thanks for all the visuals and the comments below. It really helped a first timer like me :) I had to kneed it a little longer so hopefully it still comes out good (fingers crossed)

Thanks so much for this recipe! My kids loved a similar bun that I used to buy at a nearby Asian bakery. I made this the first time exactly as instructed and the second time in dough mode with my bread maker. Not as fluffy the second time around but it saved me a bit of time.

I just made this and they came out so fluffy even though my 1st proof wasn't great (forgot how to proof in the oven properly). The only complaint is the coconut and pandan flavor was a bit muted, so in the future I may double the amount of extract. Awesome recipe!

I accidentally forgot to add eggs but the buns still turned out yummy and soft. Without them, it was almost vegan! Completely vegan if you sub the milk with more coconut milk. This is a great and forgiving recipe. Thank you!

My dough was very sticky as well so after the second mixing I turned it up to 4 on my kitchen aid and mixed it for 10-15 mins to achieve the stretchy dough test. They came out so yummy! Super fluffy. I only wish it had more pandan flavor. Next time I’ll add more pandan and maybe a little vanilla and some more sugar.

I use butterfly brand. It’s very concentrated. Try that and see if it helps. Mine is very fragranced.

yayy! i tried this recipe today and the consistency came out great, just like the video. I was afraid it was going to be dense bc it didnt stretch like in the video. For my next batches I want to add more sugar and pandan because both came out milder than how I like my rolls.

@ tram Nguyen, hard to say depends a lot on the humidity, temp, kitchen environment. I would say about an hour to 2. Most importantly, just let it rise till that point even if it’s past two hours. Otherwise the buns won’t be soft and fluffy 😉🤗

I made a batch with the exact recipe and it was good but not sweet at all. I like my bread sweet, so I made another batch adding double the sugar and the dough was very wet and sticky. It also took longer to rise. I also put pandan filling on the inside, and currently baking it as I'm typing this. I hope it turns out!

Thank you for your support 😘. It’s a sweet dough, the yeast amount is fine. Why do you think it’s too much, if you don’t mind me asking. A lot of people have a hard time getting it to rise even with that amount. Also, if you don’t prefer the corn starch, then powered sugar is another option. You can even bake without. The whole purpose is to keep it from changing color and to retain the green as much as possible. I like the color, looks nice lol 😂. It’s up to you if you want to brush with butter after. I prefer the original smell of the coconut milk. You can be create all you want. It’s a pretty forgiving recipe 🙂

I could smell yeast, but will try again with same amount of yeast next time with proper amount of cornstarch. I didn't think mine would come out ok because mine did not rise as yours(towards the end) and was definitely wetter. But, I persevered and when these babies got in the oven, they looked amazing! The recipe is not sweet at all but the taste is there. Would be great to go with srikaya in the middle yum thanks Aimee

Just to add, I have substituted the bread flour with plain flour as the bread flour is sold out. Now that It makes sense why the texture is slightly wetter and didn't rise as much due to the different protein content. But, it still works!

Hello Aimee, thank you so much for this wonderful recipe. I have made these many times and absolutely love them. However, I have never been able to achieve the dough consistency you indicated in the video with the 20 mins of kneading as the recipe calls for. I usually have to knead for almost an hour for it to get to pass the window pane test and stretch like yours. I'm wondering if anyone else if having this issue and if you have any suggestions. I'm using all purpose flour if that matters. Thank you!

Hi Aimee! Can I make this the day before and bake the next day? At what step can I put it in the refrigerator for the next day? And how do I bake after it’s been in the refrigerator?

Yes, right after final shaping. Give it a slow rise in the fridge over night. Bring to room temp the next day before baking. Let it rise more if needed.

It stays fresh for a few days in a ziplock bag or closed lid container. They still taste perfect even beyond that if you put it back in the microwave and heat it for 20-30 secs, just to warm it up. And, thank you!!! ❤️❤️❤️😘

I just tried the recipe, knead it by hand it was AMAZING. Softness and Fluffiness was 10/10. I wish the flavor of pandan and coconut milk was stronger though is there a way that i can increase the flavor tensity? would add more of coconut milk and pandan extract mess up the dough?

More Pandan should be fine but more coconut milk is probably not going to work. I have not tried this, but might consider adding some coconut cream powder?? 🤔 super excited that like it ❤️❤️❤️

I love your recipes! However, I always feel like my dough is always too dry? It doesnt look as wet as yours every time I make, but somehow it turns out pretty okay? I'm not sure if it's because it's super dry where I live or if I'm missing something or doing something incorrectly?

You can add a little milk if needed. The flour moisture can vary leading to different outcome.

You can place the shaped buns into the fridge, bring it out the next day, let it come to room temp and rise to the proper size, then bake. 🙂

Hello Aimee if I’m using active dry yeast do I mix it also with dry ingredients after activating it with water and sugar? 2nd question since I’m adding water with my active dry yeast do I need to decrease/adjust the total liquids in your recipe ? Thank you

Activate the dry yeast using the liquid from the recipe, milk/coconut milk. Don’t need to add water 🙂

My dough didn’t quite come together like the video and always remained sticky and wet, but I just let the dough rise twice and it still turned out yummy.

Its got to be the yeast if the dough is not rising. Check it by activating it in the liquid to make sure you are getting plenty of foam. 🙂

Put the coconut milk/milk solution in the microwave for 15 seconds or until warm then add in the yeast. Make sure the yeast gets foamy then add to the flour 😉

Hi I love it. It came out exactly how it is but the only thing is when it’s completely cool it starts to turn stale and the next day it’s soooo dry :’( May I know why? I stored in a air tight container when it’s completely cool. What have I done wrong? It’s winter where I am now. Does it affect?

Sounds like the bread was dense. It’s needs to be fluffy and airy to remain soft. Did it look like it collapsed when bake? If not, then maybe it didn’t rise enough before baking. Mine stays soft for days. When after baked, I can literally press it down, release, and it bounces right back to the original shape. If you compress the bun and it doesn’t recoil, it’s still consider dense for me and will harden quicker. Hope that makes sense. 🙂

@@AimeesCooking It didnt collapse. when its out from the oven it's soft and airy but the next day its like paper dry. haha. the only way I safe it is putting it in a steamer.. it became soft and fluffy again. I'll try again and let it rise more and longer

Hmmm interesting. You can also pop them in the microwave for 15-20 or until just slightly warm, not hot. It will be just like new.

Sounds like you might have left it to rise a little too long before baking. Essentially it got too big that when baked it didn’t have the internal structure to support anymore expansion of the dough and collapsed in the oven. Reduce the time for the final rise some.

Yes, you will need a little less water and knead it longer. Since it has less protein content it might not form as much gluten so you might not achieve that elastic look like mine.

Make sure to let it rise well before baking and it will stay soft for days. See my video for the size of the buns right after shaping vs right before baking.

Yes, will be more work but knead it hard and get it elastic and it will turn out great. Add just a little more flour to make it easier to work with but not too much. It needs to be somewhat wet to get the elastic texture. 😉

@thinh Nguyen might have to decrease the coconut milk amount and increase the regular milk amount. Use the regular milk amount to blend the leaves. Make the the end total volume is the same.

Thank you!! It’s more for the smell like vanilla extract would. Doesn’t serve much for taste. But the smell is amazing, hard to describe in words...very wonderful fragrance ❤️

Check the yeast. Instant vs active dry yeast. They need to be used differently. Also, new yeast is alway the best. Honestly, most of the time had yeast is the culprit for dough not rising.

Made this last night! Love it. Flavorful, light, and airy. I have one glitch though. My center buns, mainly at the bottom did not bake through. They were still quite doughy on the bottom. Any suggestions on fixing that?

It’s varies. You need to weigh your final dough then divide into how many ever buns you want.

I don't have the KitchenAid machine. I have a bowl with all my dry ingredients and another bowl with all my wet ingredients. Since I don't have the machine that she has would I slowly pour the wet ingredients into the dry ingredient bowl and use a whisk to slowly mix it?

Use a spatula to mix the two. Whisk is hard to mix. Continue to mix it with spatula until it’s somewhat combined then hand knead the rest of the way.

I tried to do this today but my dough is still very wet and I added more flour. My dough didn’t quite look like yours when it should all come together and sticking around the mixer bowl. I followed everything to a T, not sure why it’d still looking different and doesn’t have the stretch where it doesn’t break too. What may have gone wrong?

@angela Bui knead it with a spatulas till somewhat combined then go in with your hands. Can add a little more flour if it’s hard to work with, but not too much. Needs to be a moist dough.

Warm the coconut milk for about 15 secs (depending on your microwave might need a little more of less, but just warm, not hot, otherwise it will kill the yeast) in the microwave then mix the yeast to that. Let it bloom and continue some steps.

You can go through all the steps, shape it, and place that tray in the refrigerator. You must bring it out of the fridge for a few hours to let it come to room temp and rise before baking. This is not optimal but it’s the best I can think of. You are taking the risk that yeast are not very active when it’s cold. Good luck.
