Coconut Tres Leches Layer Cake
Ingredients
Sponge Cake
2 cups Flour
1 tbsp Baking Powder
1/2 tsp Salt
10 Egg Yolks
10 Egg Whites
1 cup / 8 ounces Granulated Sugar (Egg yolks)
1 cup / 8ounces Granulated Sugar (Egg whites)
1 tbsp Vanilla
2 tsp Coconut Essence
1 1/2 cups / 6 ounces Coconut, grated
2/3 cups / 5 fl ounces Coconut Milk
Milk Soak
1 cup / 8 fl ounces Coconut Milk (or sub with whole milk)
7 ounces Condensed Milk
1 cup / 8 fl ounces Whipping Cream
2 tsp Vanilla
Whipped Cream Frosting
1 3/4 cups / 14 ounces Whipping Cream
3 tbsp Granulated Sugar
2 tsp Vanilla
2 tsp Coconut Essence
Sponge Cake:
1. Preheat the oven to 350 °F and line 2-8 inch pans with parchment paper.
2. In a large bowl, sift the flour, baking powder, and salt.
3. Whisk the egg yolks and 1 cup of sugar with an electric mixer on high speed until the yolks are a pale yellow and have reached the ribbon stage*. Add the milk and vanilla.
4. In another bowl, whisk the egg whites and the remaining cup of sugar on high until you reach soft peaks.
5. To the egg yolk mixture, add the sifted flour, baking powder, salt, and coconut, and gently fold together until the flour has almost disappeared.
6. To the above, add half of your whipped egg whites and gently fold.
Add the remaining egg whites and gently fold together until the mixture is one color.
7. Divide the batter between the 2 pans and bake for 25-30 minutes (may be less or more time depending on your oven). When it's finished baking, a skewer inserted into the center will be clean, and when touched, it will be springy.
8. Remove from the oven and cool upside down on a cooling rack.
Milk Soak:
1. To a bowl or large measuring cup, combine the coconut milk, condense milk, whipping cream, and vanilla.
2. To make it easier to pour over the cake, you can optionally add it to a squeeze bottle.
Whipped Cream Filling:
1. To a bowl, whip the cream, vanilla, and sugar until it has stiff peaks.
Assembly:
1. Remove your cake from the pan and place it on a cake board or plate. Using a fork or skewer, poke holes into the first layer of cake and pour over approximately a third of your milk soak.
2. Add half of your whipped cream and spread it evenly over the cake and then add your chopped strawberries.
3. Place your second layer of cake on top, poke the holes, and soak with another third of your milk soak. Cover with the rest of your whipped cream. Decorate with halved strawberries.
4. Slice your cake and soak each of the slices with some more milk soak.
*Ribbon stage-use the egg yolk and sugar to form a ribbon on the top of the batter. If it holds the shape for a few seconds, it's ready.
