I love my days when my only problem is coffee or chocolate.
Enjoy these light and fluffy 'coffee and chocolate chip muffins' as breakfast or tea time snacks.
Servings - 10
Queen of Spices - Episode 1
Ingredients:
Flour - 1 cup
Caster Sugar - 1/2 cup
Butter - 1/4 cup
Chocolate chips - 1/4 cup + some more for decoration (I used milk chocolate chips)
Baking powder - 1 tsp
Salt - pinch
Instant coffee powder - 1 tbsp
Milk - 1/2 cup
Vanilla extract - 1/2 tsp
Egg - 1
Procedure:
1. Preheat oven at 375F
2. Stir coffee powder in warm milk and keep it aside. Let it come to room temperature.
3. In a large bowl, using an electric hand mixer, cream together butter and sugar until fluffy.
4. Add an egg, vanilla extact and beat the mixture on a low speed till well incorporated.
5. Add prepared coffee (at room temperature) to the above mixture.
6. Mix a tablespoon of flour to chocolate chips and keep them aside.
This prevents the chips from sinking down to the bottom of the muffins.
7. Sift flour, baking powder and salt and stir in the dry ingredients with chocolate chips.
8. Place muffin liners in the cups. Fill 3/4th of the muffin cups with the prepared mixture.
9. Bake at 375F for 15 mins. Let it rest for 5 mins in the pan before detaching them.
Notes:
1. Makes 10 medium sized muffins.
2. Before taking out from the oven, insert a toothpick into a muffin to
see if it comes out clean.This test is needed as every oven works
differently. Some ovens may take 2-3 mins more time than the given
time.
