Hello friends! I have a new video for you. This is a vlog where I only speak in the intro (and for 5 seconds at the end). It was a beautiful spring Sunday and a perfect day to practice the slow-living lifestyle. No talking required. I wish I had more days like this (who doesn't, right? 🙂 ) The recipe for the meringues is below. I changed the filling as I didn't have all the ingredients, but I've left a note so you can try the original recipe if you like.

Meringues with passion fruit (original recipe)
Meringues
200 ml egg whites
300 g of fine sugar
Pinch of salt
1 teaspoon of ground coffee
½ vanilla pod
1 ½ teaspoons of potato
1 teaspoon of apple cider vinegar
Fruit cream
2 kiwis
3 passion fruit
5 mint leaves
250 g of thick mascarpone
150 ml sweetened cream 36%
3 tablespoons of turmeric
Decoration
Fresh currants or mint
How To Make Meringues
Beat the room temperature egg whites with a mixer, gradually adding sugar and salt until stiff. At low speed, mix the egg whites with coffee, vanilla seeds*, flour and vinegar.
Transfer the mixture to a pastry bag. Place mini meringues with a diameter of approx. 6-8 cm on a baking tray lined with baking paper.
Place in the oven preheated to 145 degrees and bake for 35-40 minutes. Open the oven and wait about 5 minutes until the meringues cool down a bit.
*I didn't have a vanilla pod, I used ground vanilla / I also do not have a pastry bag but my batter wasn't tick enough so I use a spoon.
Fruit cream**
Peel the kiwi, cut the passion fruit in half and remove the pulp. Blend the kiwi with mint until smooth. Mix with mascarpone cheese and passion fruit pulp. Whip the heavily cooled cream with sugar and combine with the fruit cream. Transfer to a pastry bag.
** I didn't have everything to make this cream, so in my version I mixed 2 kiwis with vanilla homogenized cheese (which is like a tick yogurt).
Serving***
Cut each meringue in half with a sharp serrated knife. Spread creams on the bottom and decorate with fresh fruit. Cover with the upper part of the meringue.
*** I put the cream both inside and on the top of the meringue. I put pieces of kiwi inside and currants on top.
