Modern Rogue: Episode [1,653] -The year is 2035 -(Brian and Jason are consuming some sort of edible or potentially edible item.) -(The flavor of chocolate is mentioned.) -Jason: "I do not like chocolate so I will likely not enjoy this." -Brian replies: "Oh, that's right. You don't like chocolate, do you? You mentioned this before." -The episode immediately cuts to a montage of every time Jason has said he dislikes chocolate or Brian says that Jason does not like chocolate and plays them in reverse chronological order dating all the way back to the Miracle Pill episode. -30 minutes are added to the runtime of the episode just for this segment. -Episode returns to the topic at hand after a brief intermission. -They taste the item. -Brian's face lights up with delight at the taste of sweet, sweet chocolate. He exudes the delight of a small child who was given a treat for behaving themselves at a long family gathering. -Jason scowls and grimaces as the taste of chocolate defiles his tastebuds. Truly, how could man folly so greatly to the point where this event has befallen him. Surely his life is predestined to continuously expose him to the taste he dislikes so greatly. Perhaps he could even call it a curse. -Brian giggles with glee: "This tastes AMAZING" he says, for truly this is a great day. -Jason glances at him, his stare is like blades sharper than the razor of Occam himself. -Jason replies in defeat: "I hate chocolate..."

I can confirm, Coffee is a Diuretic. And if you’re lactose intolerant (like me), you might choose to use almond milk instead for your creamer. And then you get kidney stones, because almonds have more Oxalate in them than almost all other foods. So then you have to go in for a lithotripsy procedure and hope that the doctor gets out all the kidney stone particles, because you really don’t want the invasive procedure that would have to follow. And then you stop drinking coffee because you don’t have any non-almond milk creamer in the house, and you lose your daily Diuretic. Which you will regret, trust me. 🤦🏻♂️

"Objective" Eh, science it still out on that. In most tests, supposedly expert tasters -- whether we're talking coffee, wine, or whatever -- are rarely consistent in their descriptors, and often inconsistent with themselves from previous sessions. There may be some exceptions, like the few Master Sommeliers in the world, but it takes _years_ of dedicated training and tasting practically every varietal many times to even be able to get that title. Note this isn't a huge deal when it comes to reading a coffee description and picking something that sounds good _to you._ With a little experience, you'll figure out which note descriptions describe a coffee you're likely to enjoy more versus those that don't match your preferences. But one taster's raisins and chocolate might be another taster's earthy with dried cherries. It's doubtful another would say floral with pineapple notes to the same coffee.

EDG Coffee has made me a coffee snob. And they just showed top level excellence when I recently became a subscriber and was mega impressed with the customer service. Basically signed up on a Tuesday, coffee arrived the next day. I'll never buy any other brand again. It's really that good. I bring it with me when I travel too. 🙌🏽

A few fun things that I LOVED and noticed. Bringing the actual foods to taste alongside the coffee. Such a great idea. After all, you can only make comparisons vs things you already have a reference point for. The word "strong" for coffee can be sorta mixed with the word "smooth" for whiskey. You don't have a full palate built around tastes, but you wanna think of something. So Strong, smooth, bold, etc come to mind. One thing I hope they explore is cold brew. Steeping coffee beans for 24+hrs in cold water REALLY changes things. Less oils, different flavors, and so many things that could be explored as well. I live in AZ, so I tend to cold brew coffee in a pitcher I have specifically for that. I get more flavors that way then when it's hot. Less oils, so my mouth isn't as dry as well. Hot brewing coffee and adding ice is NOT the same BTW. You take those oils and expand them when adding ice. But then you just dilute it from there. So many lessons from whiskey tasting carry over to coffee or even food profiles. Gotta build that base of knowledge first!

@@natehardman7362 She didn't explain why, or it got cut, but burr grinders crush the bean, rather than cut. That is important because it releases the oils in the bean. I've own both types of grinder and even a bad burr grinder has so much more aroma and flavor than a blade. The kitchen smells soooo much nicer.

As someone going through the process to be a Q(uality) grader, there is a very objective side to taste and smell. The process to Q grader teaches you to speak the exact same language on taste and smell. The subjective part of taste and smell is what does that flavor recall in your brain. I can drink a coffee and taste the same thing but not know what it is. But you can drink the same coffee, have the same flavor note but recognize it as blueberries because of your grandmas blueberry pies. She did differentiate between subjective and objective and what she was doing it that moment was showing while you say this is what the flavor recalls in your mind, this is what the flavor actually is. And he actually admits to not liking cherries and accepting that.

That's not really why we do it (not a Q grader like her but I work at a roastery and cup coffees a lot). It really is to spread it all out on the tongue evenly and "airate" it (the oxygen thingy she talkes about) so that we actually get the entire taste spectrum. If it's overly bitter, we want to know that, if it's overly acidic we want to know that etc so we drink it in a way where we are able to taste as many flaws in the coffee as possible

Hey, please talk about the difference between robusta, arabica and varius blends between the two. I personally enjoy a medium-dark roast of robusta only. Sweet and bold, brings up earthy notes of dark sugar and dried smoky plums.

Aeropress is what I use. "that looks like a science thing" it is called a "Chemex" coffee maker (similar to the phrase Chemistry Extractor). 3:10 misunderstanding. He asked if freshly harvested or dried coffee beans smell like coffee or if it is only after they have been roasted. I really wanted to know that answer.

@@JediSentinal If you get your coffee from somewhere like Starbucks, it all just tastes like burned coffee. That's intentional. They can't control the beans from season to season or year to year, so they just burn them to the same flavor.

Wrong. Light roast doesn't meant most caffeine. Whether light, medium, dark roasts, the caffeine content stays the same almost. If there will be differences it will only be miniscule amount in a way you won't even notice it. Caffeine is a stubborn compound and it doesn't degrade easily during the roasting process.
