old Rice Noodle Salad/Funchoza/Фунчоза
1 package ( 2 bunches) of rice Glass noodles (very thin ones)
2 cucumbers
1 large or 2 medium carrots
2 bell peppers ( different colors , like yellow and red)
1 bunch of cilantro
2-3 cloves of garlic
1/3 of a cup of any vegetable oil ( I use avocado oil)
salt and pepper to taste
1 -2 table spoons of sesame seed oil
2 table spoons of hot chili sauce
2 table spoons of rice vinegar
1/4 of a cup of soy sauce
Method:
Put your noodles in a heat proof bowl and pour boiling water over them to cover. Set timer for 10 minutes. Close bow with a lid.
Julienne all your vegetables and place in a big bowl.
You need to cut all veggies in long thin strips.
When 10 minutes have passed, check on your noodles.
Drain and rinse with cold water.
Drain very well.
Place your noodles in a bowl with salad and tear them apart, to make them shorter.
Add all your flavorings: salt, pepper, sesame oil, rice vinegar, chili paste, soy sauce.
Mix well.
Put chopped garlic on top of the salad. Heat up vegetable oil and pour over raw garlic. It will cook the garlic and add great taste to a salad.
Mix well.
Serve either as an independent dish or as a side dish to any meat.
