@@schmidt188no any korean person knows no matter how many store brands you add, you can always find the one your mom made. Jar kimchi from a brand always tastes too sour, and not as crunchy.

You can definitely tell when its fresh and when it’s bought from the store. So her blind tasting it doesn’t matter cause she knows just by the taste and the texture her moms is the fresh one. It’s like canned corn or frozen corn compared to fresh corn
@schmidt188

@@jacket6139 it all depends on the brand's ingredients, fermentation process and time. it's ignorant to say "no matter" when you didn't try all the products on the market. there are bougie kimchis out there that can up homemade kimchi. tobagi is an intermediate level option but it was even maangchi approved. also there is a taste difference between korean and american jongga.
@jacket6139

@@schmidt188 no it's no matter. How do you expect a brand, making thousands of jars of kimchi a day, in a factory, to compete with homemade kimchi? No store bought jar food will taste as good as homemade this should be common knowledge no? Do you know any premade packaged spaghetti that tastes as good as an Italian moms home cooked spaghetti? You are ignorant. These packaged jars of food have preservatives, all types of chemicals to keep it "fresh." They could never compete with something homemade and eaten fresh.

As an extremely white girl who fell in love with kimchi because of my Korean friends...it's the best I can do since I've never been able to successfully make my own (and boy have I tried to make it myself a few too many times) - my friend's mom is nice enough that the one trip a year we get to make out that direction she stocks me up for about half a year before I have to resort to Costco kimchi

One thing I will recommend, is making ready to eat/quick kimchi first, so you can get a handle of the flavors and stuff, before trying to make the actual fermented kind. The flavor notes are the same, it's just missing the pungent sour taste/health benefits of fermentation

@katvonsweetz1372 yes very sour. And a restaurant asked me one time do I want it raw or cooked. I'm like IDK 🤷🏽♀️. But what they gave me tasted like straight vinegar awful. I tried following her recipe and did not like that either. But I don't know what it's supposed to taste like to say it is nasty or if I made it wrong. I think if she can give me a good store brand that it's supposed to taste like when I make it I can have a guide. Maybe I'm not fermenting long enough.. send help 😫 lol

I used to not like kimchi, but now I’ve grown to love it- all kinds of kimchi from fresh to really. fermented. The freshly made one isn’t fermented and is meant to be eaten same day- to about 3 days max. It doesn’t have a sour taste. Fresh kimchi goes great with white rice and pairs well with boiled pork belly. The fermented kimchi is sour, it goes well with other foods like bbq meat and also as an ingredient to cooking soups/stews/stir fry. You can tell the kimchi is fermented by looking at the cabbage and see if the cabbage is translucent. If it’s really translucent then you know it’s really sour. I hope that helps!
