A quick overview of the 64mm SSP Multipurpose, 64mm SSP High Uniformity, and the Niche Zero. These are my subjective tasting observations of each burr and I highly suggest you try them out if you can! I personally would opt for the SSP MP burrs and a Niche Zero as they present both spectrums of what coffee can taste like (high clarity vs. high body). With two grinders that have extremely different flavor profiles, you can start building your coffee preferences for your next grinder upgrade :)
tl;dw
SSP MP = Clarity monster, sharp acidic presentation, potentially overwhelming clarity, lacking body in espresso.
Niche Zero = Thick espresso body/texture, great mouthfeel/presentation, makes everything taste like chocolate, lacking clarity.
SSP HU = between SSP MP and Niche (leaning more towards Niche), good body/texture, slight clarity, too similar to the Niche Zero
I'd suggest you get SSP MP + Niche as I don't think you get a significantly different experience in cup from these burrs until you drop 2k+. If you don't have the space for two grinders then the SSP HU is good enough for most folks and is the "safest" pick of the three especially if you prefer chocolate/high body/slight clarity.
Elaborating more on Multipurpose vs. V1 (Stolen from Spencer of EAF)
Brew (V1 Unimodals)
Capable of building pressure for espresso and can produce tasty shots but are heavily dependent on the coffee used. A really unique experience, these shots have very low texture and not much sweetness or bitterness. Instead they focus on extreme flavor separation and emphasize acidity. Somewhat tricky to dial in due to the narrow window of “Too Fast” to “Choking”. This set likely produces far fewer fines than the Multipurpose. Prepare for everything to run really fast. Profiling is basically essential to be able to use these burrs effectively for espresso.
Multipurpose (V2 Unimodals)
These share the same fundamental geometry with the Brew burrs, but the Multipurpose have flattened outer edges to significantly shrink outfall and increase fines production. Remarkably different from the Brew set for espresso, these burrs are capable of producing high texture and high sweetness shots with nearly comparable clarity. Acid presentation is a bit more muted than the Brew burrs. Overall these shots are a significantly more balanced cup. They are a much easier set to dial in too, and they taste good at high flow rate turbos and slow flow rate blooming shots. Water recipe is very important for these to avoid astringency.
