🙌great video. Question do you brine your chicken? I myself have almost given up on smoking chicken. My grilled chicken is much better. I have never competed, just a backyard cook.

I do brine, and inject. Really good smoked chicken is really unique, but grilled is always amazing

Sorry about your trk, I hope your fuel system isn't contaminated. All new diesel trucks if your fuel system gets contaminated the the whole system except the tank has to be replaced. And it AINT covered under warranty.

Thanks bud, I think from what I can tell it’s emissions related, but the last thing I want to do is get that far from home and have it go into limp mode

That may explain why sometimes the chicken I’m judging looks juicy but doesn’t taste “juicy” - watery maybe, as if the flavor didn’t get transferred. If I lived closer I’d definitely volunteer to be in your practice judging pool. Good luck!

Did you say that you took them off at temp of 203? How long did you smoke and what temp did you u use for the foil portion of the cook?

I did. Those weee at 320 on the gravity for 45 min in the smoke and what ended up being about 35 to 40 min wrapped, needed 50

A classically trained chef would tell you that texture/consistency/mouthfeel is 100% a conveyor of flavor, so you're spot on in your observation. Go with your gut.

Lol, yup I’m a bit of a kitchen hobo who just likes to test but absolutely. Repetitions of getting it wrong vs getting it right showed me a while ago that everything is just better when it’s properly tender. Thanks for watching bud 👍

Rent a tuck for that one weekend. In the long run it will not be too costly. I rent a nice new vehicle when there is a long trip to take. So I use my old car for local transport.

Go with your gut my friend!!! Also don’t discount what you did win. Yeah, okay they were smaller competitions, but there were some heavy hitters there at those competitions, and you did win. You do have a chance to win, not just one but both of them. Like I have heard a number of times from the border brothers, plan your work and work your plan.

Being a practice and a tester it would have been beneficial to pull 3 keep going pull another 3 and then push the last 3 to see the differences Legs are great plenty of fat so you can push em along
