I noticed that the chef does not use a cover to increase the temperature of the wok. A cover will trap the steam and spread the heat around. Even covering it for 15 to 20 seconds can make a lot of difference and ensure that all the bacteria are killed.

I lived in Singapore for a month, and found a Malaysian hawker store just like this.. i repeatedly said I would only be the one eating so give me smaller potions.. apparently the serving is so generous even the kind woman already lessen the serving... To me it could still last up until dinner! I wont complain more as it was delicious.

The Economy Rice, Mixed Rice, Nasi Campur, Chap Fan, etc...... is unique in our country. It provides affordable meals to the people. But no stall owners have used an English name correctly.. I suggest that we call such food which is rice + a variety of dishes (that we can choose) as "MIXED DISHES RICE".

It's all geography. Canton (Guangzhou now) is where genuine Chinese cooking originated. Over thousands of years, the Chinese developed so many ways to cook just one food type (e.g. chicken, heard they've got over 100 ways so different tastes as well). The reason is that the weather allows so many food types/resources in the area for the creations. Why Japanese adore mainly fish (sushi) coz they don't have much choice, especially during winter. Same for Koreans who have been relying on Kimchi so they have something to go with rice too. It's not pleasant but it's what it is.

@@spaceinvader384 WTH, don't try to cause conflicts between Chinese. Every province in China has their own great genuine cooking, not just Guangzhou. Personally I like spicy sichuanese cooking more. FYI, there are more Fujianese than Cantonese in Malaysia.

Love Msia cai fan style of take your time and scoop yourself. In SG case, we are compelled to pick fast and sometimes the staff scoop too little.

In Msia, people scoop themselves with dirty hands that never wash after go toilet then drop the scoop into the food for next person to use. Some talk while scooping then the spit go all into the food... hair also drop inside the food. Clean nvm la... but many ppl work whole day in construction or farm then come buy cai png... you eat you happy okay lor... thats how covid19 spread so much in Msia... 1 scoop thousand people touch. See what you value la... I value hygiene.
