for the tortillas
2 cups of all purpose flour
1 tsp of salt3 tbs of cooking oil 1/2 a tsp of baking powder
☆ for the pineapple salsa
3 medium sized tomatoes,
2 red onions
1/2 of a full (and ripe) pineapple,
1 bunch of Corriander, roughly chopped
A pinch of salt
1 tsp of mango habanero sauce
☆ for the pork marinade
500g of pork loin.
A fresh chilli
1 tsp of paprika
1 sprig of fresh thyme
A squeeze of lemon juice
2 cloves of grated garlic
Method:
pineapple salsa
In a bowl mix the chopped coriander, tomatoes, onions and pineapple.
Drizzle the mango habanero sauce, mix everything together then pop in the fridge to chill
Tortillas:
In a bowl, mix the salt, flour, cooking oil and water to form a dough similar to that of chapati.
Cover and let it rest for about 5 minutes.
Uncover, section it out into small balls then roll them out.
Cook them in a pan over very low heat until small brown spots appear on both sides.
Pork:
Boil in 1/2 a cup of water until soft and cooked through.
Once it dries out, add some cooking oil and pan fry until they turn brown.
Add in the mango habanero sauce and stir
To serve, assemble the salsa and pork over the tortillas
