What I love about the filming here is when they're watching the other cook you can see their confidence shake. These are two of the best chefs in all of China, they can recognize talent when they see it and they can see each other's talent, but what's so realistic is the building of their fear. You can see it as the other moves along the cooking, the doubt starts creeping in, the dark voices that ask "did I time it right, did I add the right amount, did I make a mistake".

This movie is pretty balanced. Imagine how much better Paul would be if he could taste, but then, imagine how much better Sky would be if he could plate.

Well in some points Paul has the knowledge of modern and science in culinary world but due to his sense of taste is awful things might have gone wrong with his own dishes, while Sky might have the bizzare knowledge and experienced with mouth-watering flavours but he can't be recognized as a Michelin Chef maybe because he lives in a rural area that all he cares your food taste good no matter what your dishes look like. But in the end they both show that they are a dynamic duo that can made things extraordinary because of their skills combined together, that what you called a balanced...

I am a Michelin 2 star restaurant chef in USA and about the beef scene, here is my take: The first beef uses strong heat and fire to caramelise the beef surface which will give it a strong roast smell. It is seasoned with salt and pepper and the onions will add a slight pungent to it. The high and fast heat melts some of the fat faster, which unleashes more flavor. Altogether this dish will taste better than the other. But the other dish is slowly cooked with a burner which means more fat and marbling is retained, making its texture softer and fatter, which melts in your mouth more. The apple flavor adds a sweetness which makes more mellow. Altogether one has better flavor but the other has better texture. Who do I give it to? Both - the former is more catered for the masses but the other is more for classy people. Each has its own way.

Good take! In the movie the chef who wears a bandana cooks in his small , family-run restaurant that serves to his local community. Learned his cooking knowledge from his father While other chef works on a 5 class restaurant in Paris and China and learned all of it from studying abroad.

The reason the classy chef "won" wasn't because of taste. The street chef insulted the classy chef before by saying that his recipes were just parlor tricks and pointed out the sous vide steak which would need to be seared anyways or it would get too cold before the customer is done eating. By using the smoker, the classy chef is showing that his so called "tricks" are actually practical basically refuting the previous insult.

Yes it does. Onion adds some light smooth flavor and cooking wine will tender the beef because the alcohol content breaks down each fiber string of the flesh. And obviously salt and pepper is required.

It depends . There are diffrent styles of cooking . Some like their food cause of the taste and they dont depend on the looks of the dish . others like their dish to be stylish and dont care whether the taste is mediocre or perfect .
