A highly requested recipe from you guys! thịt kho trứng is one of my FAVORITE dishes that my mom makes. It brings me back to childhood, and having a nice home cooked meal by my mommy every night. This recipe was pretty easy. Hope you guys enjoyed it!
[ Thịt Kho Trứng RECIPE ]
INGREDIENTS for the marinade:
Pinch of salt
1 tbsp sugar
1 tsp MSG
1/2 tbsp chicken Bouillon Powder
2 tbsp fish sauce
INGREDIENTS for the sauce:
2 lbs pork shank or pork belly
8 hard boiled eggs
Neutral oil
1/4 cup White sugar
3 large stalks green onion
3 garlic cloves
1 thai chili
2 tsp chinese five spice
2-3 cups coconut water
2 tbsp fish sauce
3 tbsp oyster sauce
TO PREP the meat: cut your pork into large chunks (about 2 inches) and par boil in a pot of water with a few ginger slices and a splash of chinese cooking wine. Boil for a few minutes to cook off any impurities and then rinse the meat and let it dry. Then combine ingredients for the marinade into a bowl and mix. Let the meat sit for a couple of hours or overnight.
TO PREP the eggs: boil 8 eggs on high for 7 minutes. Once done, let it cool and remove the shells. Optional step: take a fork and continuously poke the eggs all over to create tiny holes.
TO COOK: bring a large, somewhat deep, pan on med low heat and add 2 tbsp of oil. Once hot, add in sugar and stir and cook for a few minutes until it develops golden brown color. Then add in garlic, chili, green onion and pork and mix to get sugar evenly coated. Cook for a couple more minutes to get caramelized edges on the pork. Then add in chinese five spice, oyster sauce and fish sauce and mix & cook for a few more minutes. Lastly, add in coconut water, bring to a gentle boil, then lower the heat and let it simmer for 1 - 1.5 hours. Be sure to check and mix in between every so often.
TO FRY the hardboiled eggs: bring a medium NON-STICK sauce pan to high heat and add in oil (just enough to cover the bottom). Once hot, carefully add in your eggs to fry. Tilt the pan and continuously rotate the eggs to get an even golden brown on all sides. It should take a few minutes. Once done, remove and set aside.
After one hour, check your pork for tenderness and flavor. If it needs more time, let it continue to cook for a little longer. If it’s ready, add in your eggs and cook for another 10-15 minutes. Adjust the flavor to your liking with more sugar or fish sauce. Once done, garnish with green parts of green onion and serve over white rice.
