Super quick meal -- 15 minutes or less to prep and cook everything.
Spicy Beef and Pepper Stir-fry
1 lb flank steak, thinly sliced across the grain (Stir-fry meat)
2 Tbsp avocado oil (any high heat oil)
1 red bell pepper, thinly sliced
½ cup thinly sliced green onions
¼ cup water
2 Tbsp low-sodium soy sauce
1 Tbsp fish sauce
1 Tbsp Sriracha hot sauce
1½ tsp cornstarch
½ tsp sesame oil
1 (12-oz) pkg frozen broccoli florets
Whisk together water, soy sauce, fish sauce, Sriracha, and cornstarch in a small bowl. Set aside.
Cook beef in hot avocado oil in a large wok or nonstick skillet over medium-high heat 3 minutes or until browned. Remove beef from pan; keep warm.
Cook broccoli according to package directions.
Meanwhile, Add bell pepper, sesame oil, and onions to pan; cook 6 minutes or until tender, stirring often. Add beef and soy sauce mixture to pan; bring to a boil, and cook 1 to 2 minutes or until sauce is thickened. Serve with steamed broccoli.
