I sous vide regularly it is pretty easy. My Instantpot has a sous vide function. You just bag the meat, throw it in at a temp you set and walk away. After that it’s just grilling to get colour.

It's not completely impossible nowadays. Some Japanese wagyu farmers have been looking at different opportunities to sell it outside of Japan since the pandemic happened. Although that being said, this is A5 wagyu, which can be difficult to find without paying an arm and a leg for especially with the amount it looks like he has. I guess you could also settle with "American Wagyu." I wouldn't recommend it to everyone, but if you truly enjoy beef I feel like it doesn't get much better.

Just to clarify things, The red stuff on the steak isn't blood, Its a protein called myoglobin its responsible for making steaks have its red color and the juices are mostly just fat and water

It may taste fine to some. But I can't eat red/pink meat. I have to have it well done. Crazy, I can drink med cook steak juices, but can't eat the meat. The look reminds me of when I cut myself real deep as a kid and I'm like, that looks just like my open cut way back then.

On wagyu I prefer medium because it's still very flavourful but not so rich because more of the fat renders out. Definitely try it out.

I am using a translator. I am Japanese and live in Japan. You have the impression that wagyu beef is ridiculously expensive, but my local butcher sells it for around $10. Branded items (Kobe beef, Miyazaki beef,etc.) are known to be expensive. If you ever come to Japan, I recommend stopping by a butcher shop. I don’t like that you added so much flavouring for something so pure. Salt and pepper seems like it should be the only choice. I’ve done similar sous vide and wagyu does not need garlic powder.
