Here is one of my perfect creations for holidays! Inspired by gingerbread cookies, here they are made without flour and sugar free. Since I like to eat them with fresh fruit on top or dip them in my coffee, sugar is unnecessary. Good tasting !

Ingredients :
80 g almonds, chopped into small pieces (1/3 cup + 2 tbsp)
50 g chopped hazelnuts (4 tablespoons)
25 g walnut (2 tbsp + 1 tsp)
80 g gluten-free oats (1 cup)
Some ginger
Zest of 1 clementine or 1 orange
Zest of 1/2 large lemon
Some nutmeg
1/2 teaspoon of cinnamon
2 eggs
