After 5 days of prep and cooking the dinner went off with barely a hitch. All the food was delicious, the meat all cooked as expected, and everyone was full with just enough leftovers. I think there was a pan of pork, a pan of beans, and a pan of potato salad, and a couple smallish bowls of greens and coleslaw left over so this was just the right amount of food for 75 people. I could have used some larger briskets though as that ran out right at the end of the line. No seconds on that which was a bit disappointing.
The whole week was pretty crazy as we did a large breakfast picnic for about 100 people on Monday, my wife worked Monday evening-night so I got to watch the kids and couldn't cook much, my wife did a farmers market on Tuesday so I had to help her get ready for that and watch the kids again, and then dinner on Wednesday. Without those other events (and more fridge space) I could have easily done this all in a couple days less time.
It is always nice when all the food is done and on the table and people start taking their first tastes. Can't wait to do this again!
